    INGREDIENTS:
    1 cup or 2 sticks (225g) butter, unsalted, softened to room temperature
    1 cup (200g) granulated sugar
    1 tbsp vanilla extract or almond extract
    1 large egg, room temperature
    1 tsp baking powder
    1/2 tsp salt
    3 cups (450g) all-purpose flour, sifted
    DIRECTIONS:
    In the bowl of a mixer (or with a hand mixer) attached with the paddle attachment, cream the butter and sugar together until the butter is lighter in color and airy, about 2-3 minutes. Then add in the vanilla extract, egg, baking powder, and salt, and mix for another 15 seconds. Next add in the sifted flour, in 2 batches, on medium-low speed. Continue to mix until the dough starts coming together and no longer sticks to the sides of the bowl.
    wrap the dough with plastic wrap, and with a rolling pin, roll the dough into all of the corners of the plastic wrap to prevent the ends from becoming dry and cracked. Refrigerate for at least 4 hours or overnight.
    Flour your working surface and cutting board, and roll out the dough into a 1/4 inch thickness. Then using a cookie cutter, cut out your desired shapes. Place on a baking sheet and place in the freezer for 10 minutes (refrigerator for 20). This is a very important step. This will prevent the cookies from spreading in the oven and will help them hold their shape. Continue with the rest of the dough scraps, by pushing them together, re-flouring your surface and rolling pin, and rollin the dough out to 1/4 inch thickness. Continue this process until no dough is left.
    Pre-heat the oven to 350F while the cookies chill. Depending on the cookie size, the time will change. For standard size cookies, it will be 9-11 minutes.

    So the "frozen " cookies go straight into the preheated oven ? Or do they need to sit out for a little bit at room temp again before it hits the oven ? Thanks.

    I'm making these cookies right now! love the smell of them and using almond extract. I've baked them for about 13 minutes and they don't seem to brown around the edges. I pulled them out anyway and they're a bit spongy. I haven't tried one yet. just not sure if that's how they're supposed to be. I was thinking they'd be harder?

      Soft cookies are the best!! but you can always cook them longer if you prefer them less chewy. :)

      i would say no more than a couple days before they dry out.

    Cassandre can I use powdered sugar instead of granulated sugar?? Would it affect the texture of the cookie???

      +Alejandra Reyes unfortunately, yes it will make a big difference. Powdered sugar is a lot lighter and less dense than granulated

    What's the difference between using cold eggs and room temp eggs? I made this recipe right now but I accidently put a cold egg

      It helps everything incorporate together well. If you forgot, it's not the end of the world. I'm sure they turned out fine :)

    Do I have to leave the dough in the freezer for 4 hours or can I shorten the time?

      It's best if you leave it in for four hours becuase they will hold their shape better, but I would do it for at a minimum of 30-60 minutes

    Maybe you can answer this ??? for me. What is the difference between salted and non salted butter, you know??other than the obvious. Is it a big deal if you use salted instead???? I have never found the answer to his question, I'm hoping you can help

      hi there. No it's not a big deal to use salted if that's all you have in your refrigerator. just do not add the salt that most dessert recipes call for. The reason recipes call for unsalted butter is so that you, as the chef, can know exactly how much salt is going into your dessert.

      Lovebites thank you. you are the 1st person that has actually gotten back to me. so I will continue doing exactly what I have always done then. just not adding salt. I wasn't quite sure if it changed the texture or not. Thank You
