My Favourite Sugar Cookie Recipe

    How to make Sugar Cookies!
    Sorry I haven't been posting as much, life is very busy with 3 kids these days. Thanks for watching!
    Not "the Best" but Best is my name ;)

    Ingredients
    1 cup of softened unsalted butter (227 grams)
    1 and 1/2 cups of sugar (300 grams)
    2 eggs room temperature
    2 teaspoons of pure vanilla extract
    3 and 1/2 cups of all purpose flour (450 grams)
    1/2 teaspoon baking powder
    1/4 teaspoon salt
    Method
    1. In a stand mixer with a paddle attachment, beat the butter and sugar until light and fluffy
    2. Add the eggs one at a time. Beating each time until just combined
    3. Add vanilla extract and beat until combined
    4. Mix baking powder, salt and flour.
    5. Add flour mixture to butter mixture about 1/2 cup a time.
    6. Turn mixer back on, and mix until everything is combined. Once your mixer can’t do anymore, mix with your hands until you have a smooth dough if needed.
    7. Separate dough quarters and wrap each quarter in plastic wrap. You want each quarter to resemble a pancake for easy rolling.
    8. Refrigerate for about one hour or until firm enough to roll.
    9. Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Line your baking sheets with parchment paper.
    10. Remove one quarter of the chilled dough and, on a lightly floured surface, roll out the dough to a thickness of about 1/2cm using a floured rolling pin. Keep turning the dough as you roll, adding more flour if needed, making sure the dough does not stick to the counter.
    11. Cut out desired shapes using a lightly floured cookie cutter and transfer cookies to baking sheet.
    12. Place the baking sheets with the unbaked cookies in the refrigerator for a minimum of 15 minutes. This will help cookies retain their shape while baking. (I like to do an hour for more complicated shapes).
    13. Bake for 10minutes. (Could be anywhere from 8-14minutes). It depends on the size of your cookie and your cookie sheet or even your oven! For smaller cookies I would start checking at 8 min. Cookies will be done when edges are "just" starting to brown.
    14. Remove from oven and let cookies cool on baking sheet for a few minutes before transferring to a wire rack to finish cooling.
    15. Once cooled, frost with royal icing.

    Soo this is my second year using this recipe and it is my go-to!!! Last year I made at least 3 batches throughout the holidays. Depending on my cookie cutter size, sometimes I would get 50+ cookies! So easy, delicious, soft, and fool proof! Love love love it !

    Also can i still do this with a hand mixer because my parents don't believe in stand mixers 😐.

      You can even do it with a wooden spoon. No mixer required. Just need to use some more muscle 💪🏻😉 I’ve made it this way in the past with no problems.

    Thanks so much for this recipe! I’m a newbie at baking and the cookies turned out amazing! My butter was refrigerated and salted so I skipped the salt and mashed the butter up with a fork and add abit of hot water but it still turned out good :D I know it’s sugar cookies but maybe next time I’ll put in less sugar :)

      When I forget to put the butter out, I cut the butter the into lots of cubes, and it softens faster that way. 😁

      Eugenie Tan the description is wrong. If 1 cup is 227g then you said 3 and a half cups was 400g and that is clearly very wrong. I have to get a different recipe now as I’m unclear on measurements.

    For this recipe can I use a toaster oven and mix by hand?

      For sure! I’d check the cookies at 6 min if in the toaster oven. As toaster ovens usually have thinner pans, and it may bake faster. You want to take the cookies out when the edges start to brown/change colour ever so slightly.
      And no mixer, is fine! I use a wooden spoon and spatula.

    Hi! How long is the shelf life of this recipe when refrigerated, when freezed, and when baked? tia! ☺️

      The dough, unbaked. 1 week refrigerated. 3 months in the freezer.
      Baked I store in an air tight container at room temp. I usually like them within 2 weeks. Could push to 3 though.
      Baked, frozen I wouldn’t go pass 3 months. That’s just what I’ve heard. I’ve personally never tried past a month. :)
      Also I have frozen cookies decorated with no issues. :). Always defrost in the container at room temp.

    This recipe looks really delicious! I've been looking for a good recipe for royal frosting cookies! I do have two questions tho, what size eggs did you use? And what were those white sticks you used when rolling out your dough? 😃

      +Megan Gilson Thanks Megan! I use large eggs and the white sticks are AMAZING! They are "fondant spacers". These ones are by Fat Daddio's. I'm currently doing a big kitchen Reno, so when that's done I'll be making a video of my favourite tools. Those sticks are the best! Even rolled out cookies all the time. Thanks for watching! ☺️

      Thanks! It really depends on your cookie cutter shape. And how thin you roll out the dough. I roll out to about 1/4 on an inch and recently made Christmas tree cookies (almost 3 inches each) and I got 55! But with larger cookies sometimes I’ve only gotten 20-25. So I say 20-45 on average. All depends on the shape :)

      Hi! It all depends on the size of your cookie cutter. I made snowflakes, just over 2 inches, and I got nearly 60 cookies! But when I am making a cookie around 4 inches, I’ll only get around 25. Bigger the cookie cutter, less cookies. If you don’t need that many you can easily half the recipe :)

    I want to make these cookies today. My question is can I just spread the dough out before baking it. Do I have to put it in the fridge? Can I just skip that part. And if I skip that part the cookies won’t rise, they will remain the same shape right ?

      The dough will be quite warm to work with if you don’t chill first. I find it becomes too soft, and my dough will break with the cutters. That’s the main concern. One thing I do when in a time crunch, is roll out the dough between parchment, pop in the freezer on a tray for 20 min. And then the dough is firm enough to cut out. If you’re quick enough, you can pop that right in the oven without refrigerating again. Chilling the dough also helps the cookies keep their shape while baking. So if you have a specific shape, best to pop it in the fridge or freezer for 10 min before baking if you care about spreading. Hope that helps!!

      That has never happened to me. Hmmm. Make sure you’re using all purpose flour and not cake or self rising. Maybe skip the baking powder?

    If you see this I just wanna ask a few questions:
    •Why sometimes when I make sugar cookies the bottom is brownish, Golden , is that good or bad?
    •Why does the eggs have to be room temperature?

      Hi! The browning on the bottom is from the hot baking pan. As long as it’s not burnt, you’re fine! Some baking pans cause more browning than others. I had to toss some cheap pans as they always burnt my cookies on the bottom. But a bit of browning is fine. :)
      As for the eggs, lots of baking recommends all of the ingredients to be the same temperature. Honestly I’ve used eggs straight from the fridge many times, and it’s been fine. So I’m not a stickler to that.

      These cookies are meant for decorating. They’re softer than many of the “no need to refrigerate” sugar cookie recipes. But these I always cover with royal icing.

      Hi! By nature sugar cookies are a firmer cooker, but I would shorten the baking time. Take the cookies out of the oven when the edges just start to lighten brown. Ever so lightly. Everyone’s oven is different. Some find 6 minutes is long enough, where my oven takes 12 min!

      +Catherine Elder Hi Catherine! It really depends on the size of your cookie cutter. When I'm making 4 inch cookies it does around 20. Smaller 2.5 inches up to 40 😊

    Hi, loved the video, but when I made them it wouldn’t form a dough, so I added more flour until it was a dough. Is that alright? Will the cookies still taste and come out good?

      That’s fine! They may be a bit firmer depending how much flour you added.
      I do find this recipe has a softer dough. Which is why it needs to be refrigerated before using. An extra step, but yields in a softer sugar sugar cookie.

      It’s parchment paper, I never bake sugar cookies without it. Makes sure there is absolutely no sticking! So I recommend using it! ☺️

    I didn't use flour at all when I rolled them out, I rolled the dough in between parchment paper. Maybe I had mistakenly measured out more flour than was needed but I'm not sure.

      Extra flour mixed into the dough wouldn’t cause the problem that I get. Just when theres excess on top from rolling.
      Hmm, are they wrinkled prior to going into the oven? I’d get that with the parchment paper sometimes. Indentations from being rolled in between. I went back to rolling on floured surface.

      I did a bit of googling, and some people say this can happen if the oven temp isn’t high enough. So maybe try raising the temp a bit.

      It really depends on how big you cookie cutters are. Smaller cookie cutters equals more cookies! With this recipe I have gotten anywhere from 20-40 cookies depending on the size of the cookie cutter.

      Oh no! Did you use parchment paper? I always, always line my baking sheets with parchment.

      Baking with Best they actually got stuck in the parchment paper. I put parchment paper in the cookie pan and when I tried to transfer them to the cooling rack they were stuck to the paper and after they cooled down they were hard as rocks.

      Oh wow! Never had that happen! Hmmm. I really don’t think you can over mix the dough. But over baked is possible. All ovens are different, and pans. I’ve heard some people only needing 6min, where I need a good 13 min usually. So if they became rock hard, I would suggest baking them less time. Take them out when the you see some of the edges of the cookie just start to brown ever so lightly. Just! Hope that helps! 😊

      Oh no! Try adding some more flour. Especially when rolling out the cookies. When rolling the cookies I easily add another 1/4 cup of flour.

      It’s really best to let it chill in the fridge for a good hour. Otherwise the dough is too soft to work with and you’ll have trouble cutting out the shapes without it breaking. But the end result is worth it for a soft cookie!

      They’re fondant spacers! They’re one of my favourite tools. Then all my dough is the correct thickness. Makes rolling out the cookies a breeze!

      Stacy's World Left over dough? You can refrigerate and roll out more cookies. You could freeze the left over dough. Some people like to eat raw dough. Not me though! 🙂

      Yes I would recommend it. Reason being is immediately after you make the dough, it’s quite soft and difficult to work with. The dough will break easily and you’ll have difficulty cutting out shapes. Once your shapes are cut out I put them bake in the fridge (whole cookie sheet) as this prevents the cookies from spreading and keeping their shape :) Hope this clarifies!
