Thanks, Chef J!
That recipe converter needs to be outlawed! Tried to do a half dozen and it royally warped the proportions!
Having watched many of your videos I cannot believe you missed the favorite:

OMG. My wife and I had some Oyster Rockefeller in Florida about 20 years ago and never had any like it since. They were the best we ever had and I now think that this is it. Not spinach like everyone else uses. Time to give this a try. Thank you Chef John. I have got so many great recipes from you
I think the one I had was finished with some parmesan, bacon crumb and bread crumb before hitting with torch
Chef John I tried this recipe and it is delicious. I’m from Louisiana and this recipe, if it isn’t Antoine’s, is close--very, very close.
Watercress has been rumored to be the ‘secret’ green in Antoine’s recipe, for years. Yet when you peruse the many dozens of versions of OR, few contain watercress. Also, not many have got the herbed butter part down, either.
So I think it’s possible that you do indeed “know a guy....”!
Thanks!
I just would like to let you know that you are so fun to watch and listen to. Also, you are so relatable and hilarious💜
One of my favorite dishes of all time!
"...not oysters Gandhi." I died.
If you died, then how did you post this?

Merry christmas from Germany, i love your stile of preparing food.
Here in New Orleans we have another liqueur that is very similar to Pernod. Its called Herbsaint and it's great...not quite as strong as Pernod. I prefer it but it's sometimes hard to find outside of New Orleans.
Chef John!!!! wow thanks once again, will try this out!!!!!
Have a very merry Christmas Eve and Merry Christmas!
omg this looks soooooo good!!!!!!!!

I'd imagine if/when I do see Chef John- my ears and taste buds will be the only thing my eyes will 'see' ;D ... And I do, so very much, agree- "he does have some great recipes" :-]
Amazing

seasons greetings chef john!
I won a bet on you. That Chef John has a recipe for this. Swear to God, if it's been cooked, he's got it.
I sneaked in the Antoine's restaurant to see the sauce for legendary oyster Rockefeller. The experience with the chef was unbelievable! Good thing I have filmed it!
U da man chef!!!
I think I tried this butter with snails in Paris. Tasted just awesome.
Happy Holidays John....
I love oysters! Yum!
Chef John, I am fair dinkum when I says this, I really cannot think of anything that could enhance the delicious flavour of oysters naturale.
Wonderful! Your Filipino-style adobo came out great here -- using duck legs was inspiration on your part! There's a chance Santa might bring me a box of oysters. I learned how to open 'em, and if I can wrench a few of the raw ones away from the spouse, ha ha ha! Now I know a way to cook 'em! Thank you so much. Uprated.
This vid is Rockin', Fella!
Merry Xmas Chef J!
My mouth waters at the prospect of eating those oysters and sipping cognac.
Your knife is super sharp man

Ahahaha Oyster Gandhi Q 7 Q Chef John is awesome, funny, and witty as always. Love your vids!
Happy happy happy!
Joy joy joy!
The original recipe from Antoine’s includes watercress and capers. Capers make a difference. Absinthe was the original liquor Pernod or Herbsant we’re substituted when Absinthe became illegal. (Now it’s legal again.) The rock salt is a useful presentation, but it also imitates the crushed ice that raw oysters were served on.
Thank you
Capers are a standout in a lot Antoine’s dishes and are a major ingredient that makes the sauce green. Their herbal/nutty flavor after the vinegar cooks off I’ll transform any other recipe you try.
wow.. I miss oysters
u got it right. and i live in new orleans
can i substitute the pernod or absinthe with fennel?
totally do NOT like oyesters but you made this look really good Chef John I'm thinking about maybe trying oysters again
yum
Hulk Oysters :)
MERRY Christmas chef John !!
Yum
The herbed butter recipe here is also great for escargot.
I live on the Mississippi coast, and finding fresh oysters is no problem, as well as the other ingredients, but where can I find the Pernod?
Almost any good liquor store should have it and now many have absinthe again as it’s now legal.
I'm guessing the original recipe used absinthe and was changed to Pernod when absinthe became unavailable in the states.
I have some absynth, maybe Ill try this tomorrow.
nice
oysters are the best! especially from SF.
Just out of curiosity, since I'm allergic to cilantro, can watercress be used as a suitable substitute for cilantro?
it's beautiful :c
~ Chef John, how do you stay so freakishly in shape when cooking such freakishly good food ALL the time?!
That butter sauce also tastes good on a spoon
Can you use this for French snails?
You go! I think some fennel would work okay, but what a cool idea, a bit o' wild booze!
In NahlinsDahlin they use Herbsaint. Absinthe is legal now, but way expensive.
