That’s a hard question-I like Gorgonzola so to me, it tastes as it should if that makes sense. I see no reason why you couldn’t use another cheese that you like-cream cheese should work, or a goat cheese-even cheddar or Parmesan. Truly, you can use whatever cheese you like. That’s what I love about this recipe-it’s really easy to adapt to your personal tastes!

@@anitadavidson1266 thanks Anita! Honestly, you could stack any cheese you like 6’ high and up to no good (🥰) and use that instead! You may have to adjust the flour and maybe add ice water by the tablespoon if the dough seems too dry…any cheese should work as long as it forms as a pastry dough☺️
