when i was in high school, working at a fast food restaurant, i would take these blocks of lard and put them into the fryer. later they did away with this because lard/fat was supposed to be bad for you and all vegetables are supposed to be good for you. corn oil is just smashed corn, right? guess there's a lot of things they do to corn to alter it so it's not even a vegetable anymore.

There was never any legitimate evidence to reduce saturated fat but medicine kept saying it anyway and it turns out that these are natural and healthy

Enjoyable discussion. Thank you both. An unsaturated oil may, in theory, be an antioxidant, but by definition, it's trying to steal electrons. It can do that in your cupboard, and when you use it, it's oxidized, damaged, and causes oxidative damage. Cheers
Omg… this is exactly what I’m struggling with! I have high iron and lots of oxidative stress. I just started donating blood to get rid of some of the iron after being on the carnivore diet and supplements to help boost my minerals. What I’m struggling with is to get into ketosis in any substantial measure. So if there’s a way that I can get rid of this iron faster and get into ketosis faster, I think that could help me heal.

I think there are cases (adrenal fatigue/exhaustion for example) where stress is more the enemy than sugar or seed oils (well I don't know of such a case where the person ate much seed oil or sugar but anyway) with difficult symptoms... Also, there are folks who eat very healthy (by either you guy's standards) that have died from difficult diseases such as heart attack, cancer etc....diet is hugely important, but I believe a person's energetic (as in chi or prana) is probably even more so...Maybe the complexity of trying to measure energetic factors is why some things will remain mystery...mystery is good chi. I appreciate that you guys seem to agree on the general health recommendation regarding seed oils; it is a really important topic in this uplifting interview.

What is the evidence that shows that refined sesame oil is healthy? Where is the scientific evidence that shows there are toxins in seed oils? How are these toxins detected and measured?
If you google " end products of lipid peroxidation" you can find toxic compounds that are found when fats go rancid ( when they are oxidized). 4HNE is kind of a famous one. You can also find data on animal testing with these toxic compounds. There isnt much debate on wether these fats are toxic when they are oxidized. Long lasting human trials on basically any food are nonexistent, unless you take human history as a given. These toxic compounds can technically be found in any fat you may use. However, for example with butter, even if you leave out butter on the countertop at room temp for 2-3 weeks it is barely oxidized and you can still cook with it and use it. You will most definitely know when butter has gone rancid. In the case of these oils however, you know they oxidize very fast when you heat them ( like frying) and you cant really tell when they have gone rancid. Because of the process of making them, they remove the scent and color and give it new scent and color. You can not really tell if a bottle of canola oil is made today or is 6 years old. Even when used as a frying fat it is hard to tell when its gone bad. You can actually find some data on this, if you google on the right keywords. You can also test peroxidation at home if you are willing to spend money on machinery. There is also the fact that seed oils lower cholesterol when you consume them. Dietary cholesterol does not raise cholesterol ( you can actually find clinical trials for this), however consuming dietary seed oils does lower cholesterol. They even advertise with it here in Europe on the packaging. Wether lowering cholesterol is healthy or not is a whole new ballpark and a youtube comment goes to fat too comment on that. Anyway, i am just trying to give you a lead here. Not arguing one way or another. I feel quite a lot better myself after swapping out margarine and seed oil cooking oil for butter.

I remember 90s in our village was sold cold pressed sunflower oil, was dark brownish green smelling good, we knew if we not use it quickly, gets terrible smelling so we werent using it.
Avocado oil is heated not pressed! Anyone can take avocado and make oil in the kitchen same with Coconut oil. No chemicals or special equipment needed.
OK here's my post video comment: Dear Dr. Boz, In your summation you got hung up on the lack of distinguishable factors in Omega molecules from seed oils and other sources while leaving out the most important part of Cate's hypothesis. These Refined food-like products, are contaminated by oxidation, stabilizers, etc. during the production process. (Cate left out storage in this short conversation, but did touch on the additives that they use to "stabilize" these very unstable crude oils.) These un-natural ride alongs are driving the mal-adaptations, not the isolated Omega molecules. The point is that these refined food-like products are adulterated non-foods that drive oxidative stress in our bodies. Yes there are pure Omega molecules in these oils which can't be distinguished from other Omega sources at a sub-nanometer scale, but there's a lot more in the bottle than the Omegas. My take away is, regardless of Omega 3 ratios, and other complicated metabolic processes, I avoid all processed, ultra processed, and refined FrankenFoods from the Hateful Eight to the Diabetic Ten... and beyond! Seed oil is my concern, i don't cook with it but soon i will visit for 2 months my relatives, so hard to say i don't eat your meal there is seed oils, yes traditionally was lamb fat.
As humans, we need to understand that we cannot beat Mother Nature.. science got us in this mess to begin with. I respect that there are many trying to get us out of it, but we just need eat things that are not processed first. As our foods are altered l, the health dangers increase with those alterations. Start with a completely natural diet ( not man made plants) and learn to add one thing at a time and listen to your body’s reaction. Feeling great is easy if you listen to your body and learning to be your own doctor. Keep it simple. Eat to live, don’t live to eat.
I get the camaraderie, but where is the meat. Where is the science you stated would be in this conversation? Dr. Boz I may have misunderstood your sudden flip on Onega 6. Both Omega 3’s & Omega 6’s are essential and should come from an animal source. The animals we consume use to have a 1:1 ratio of omega 3:6. But today because are livestock eat crap is significantly higher in Omega 6’s pushing inflammation. Additionally plant phytosterols or Omega 3& 6 are not the same fats we find in animals. One can eat and survive for a time on vegetables but your not getting the essential fats nor protein one needs.
Hi Dr. Boz. Been looking into this as well, and I just watched 2 presentations on seed oils from 2 doctors on here. The channels are Nutrition Made Simple and Dr. Brad Stanfield. Both guys are extremely evidenced based, and open minded. I would post links, but my comments are generally deleted when I do. Anyway, these guys went through study after study, showing how reducing saturated fat and adding canola, or just adding the oil, improved heart health and other things. Hard to argue with that science, and shift to Cate's theory on how bad they are. Still, frustrating. I want definitive proof. I've almost never felt good. My muscles are always tight and burny. Been a meat eater. Been a vegan. Looking to discover (at 63) how not to die young.
I have very burny slightly achy muscles too (mostly shoulders upper back and neck, but mildly everywhere) , recently saw a rheumatologist and have some sort of vascilitis disease. Prednisone and an immune suppressant is helping alot. Just an idea on something you might check into. I'm also trying everything under the sun to reduce inflammation but honestly nothing has helped except the drugs:(
Before considering the implications of the Om6-Om3 ratio, or alleging that fructose is metabolically less important than seed oils, take a look at how seed oils are made. Using petroleum-industry chemicals, strippers and solvents, high heat treatments (molecular changes), preservatives and dyes. When you eat most seed and nut oils, you are eating industrial chemicals. Anything after that is really not relevant to health until you actually can look at clean, industrial chemical-free and high heat process-free oils. And not all seed and nut oils are the same nor are they made the same way. Opps, there goes both the baby and the bath water.

May I ask, since I am on a very clean, low carb diet, devoid of any packaged food, not in need of losing weight, do I still need to get a certain amount of Omega 6? I ask because Cronometer usually tells me I'm only at 85% (based on their thoughts on what I need)... should I add more walnuts to bring it up to 100% (they think I need 11 grams for my age, weight & height). Dr. box, I have been practicing a keto diet for a month now. My carbs are at 20%. I admit I don't always hit my fats or proteins. I weigh 148 pounds and I'm not actually trying to lose weight I'm just trying to lower my insulin resistance ( triglycerides at 130). So far I'm only blowing about .3 ml on the breath meter can you tell me what I'm doing wrong I don't really need to lose any weight at all. In fact, I need to gain some back actually.
I use refined organic coconut oil (no smell or taste), you really can't tell the difference. Fatty meats I cook on stainless steel pan with no oil at all.
Are you kidding? The likely reason the cooking shows don’t tell you which oils they are using is because they could receive severe criticism from people who think certain oils are good or not good. Just think of that the McDonald’s restaurants years ago used to use beef tallow to fry their French fries. They were hounded into changing to the “healthier” vegetable seed oils. other examples could be referenced. So is it really that hotel and some fancy restaurants don’t care and use cheap oils. Cutting costs can only be part of the picture. They may want to avoid the conflict and controversy. Some food managers may be uneducated on some of this. I think it is difficult to know what to believe about some things , and there is a lot of misinformation floating around also.
Maybe they have but because they are mostly paid for by big food companies, they may have not been published. Or maybe the data from the tests were manipulated, not done properly or for long enough. Seed oils can even be beneficial in small doses for a short period (3 months, say) but dangerous over longer ones.
So, the Topic you want to avoid becomes front and center anyway LOL Prior to 1900, how much seed oil did an average person consume in one day? And how much today? Easier availability of something does not mean use of that something should increase, right?
To track Omega-6 sources, we need to get them to use the block chain like bitcoin LOL Every bitcoin looks the same (electronic string of data) but every one is unique.

I did not know that the language is used on your show is specifically for MD and chemist. I do not have the background on these topics and so it was not helpful. When you sign your life away to seed oils, banking on them lowering your LDL, what you don't see in the fine print is that they increase the amount of atherogenic lipoproteins in circulation, namely those that have become oxidized, OxLDL not the least of which.
Right, where are the randomized control trials showing safety of industrially produced seed oils? The whole randomized trial standard argument has been over used and overall strict evidence based medicine hasn't made for a healthier population. It's the actual practice of medicine that leads to healthier patients. This means paying attention to nuance and actual mechanisms in the body . Seed oil is my concern, i don't cook with it but soon i will visit for 2 months my relatives, so hard to say i don't eat your meal there is seed oils, yes traditionally was lamb fat.

As humans, we need to understand that we cannot beat Mother Nature.. science got us in this mess to begin with. I respect that there are many trying to get us out of it, but we just need eat things that are not processed first. As our foods are altered l, the health dangers increase with those alterations.
Start with a completely natural diet ( not man made plants) and learn to add one thing at a time and listen to your body’s reaction. Feeling great is easy if you listen to your body and learning to be your own doctor.

I get the camaraderie, but where is the meat. Where is the science you stated would be in this conversation? Dr. Boz I may have misunderstood your sudden flip on Onega 6. Both Omega 3’s & Omega 6’s are essential and should come from an animal source. The animals we consume use to have a 1:1 ratio of omega 3:6. But today because are livestock eat crap is significantly higher in Omega 6’s pushing inflammation. Additionally plant phytosterols or Omega 3& 6 are not the same fats we find in animals. One can eat and survive for a time on vegetables but your not getting the essential fats nor protein one needs.
Hi Dr. Boz. Been looking into this as well, and I just watched 2 presentations on seed oils from 2 doctors on here. The channels are Nutrition Made Simple and Dr. Brad Stanfield. Both guys are extremely evidenced based, and open minded. I would post links, but my comments are generally deleted when I do. Anyway, these guys went through study after study, showing how reducing saturated fat and adding canola, or just adding the oil, improved heart health and other things. Hard to argue with that science, and shift to Cate's theory on how bad they are. Still, frustrating. I want definitive proof. I've almost never felt good. My muscles are always tight and burny. Been a meat eater. Been a vegan. Looking to discover (at 63) how not to die young.
I have very burny slightly achy muscles too (mostly shoulders upper back and neck, but mildly everywhere) , recently saw a rheumatologist and have some sort of vascilitis disease. Prednisone and an immune suppressant is helping alot. Just an idea on something you might check into. I'm also trying everything under the sun to reduce inflammation but honestly nothing has helped except the drugs:(

Before considering the implications of the Om6-Om3 ratio, or alleging that fructose is metabolically less important than seed oils, take a look at how seed oils are made. Using petroleum-industry chemicals, strippers and solvents, high heat treatments (molecular changes), preservatives and dyes. When you eat most seed and nut oils, you are eating industrial chemicals. Anything after that is really not relevant to health until you actually can look at clean, industrial chemical-free and high heat process-free oils. And not all seed and nut oils are the same nor are they made the same way. Opps, there goes both the baby and the bath water.
Did you ever hear about poppy seed oil? Not yet explored fully, but very potent.

May I ask, since I am on a very clean, low carb diet, devoid of any packaged food, not in need of losing weight, do I still need to get a certain amount of Omega 6? I ask because Cronometer usually tells me I'm only at 85% (based on their thoughts on what I need)... should I add more walnuts to bring it up to 100% (they think I need 11 grams for my age, weight & height). Dr. box, I have been practicing a keto diet for a month now. My carbs are at 20%. I admit I don't always hit my fats or proteins. I weigh 148 pounds and I'm not actually trying to lose weight I'm just trying to lower my insulin resistance ( triglycerides at 130). So far I'm only blowing about .3 ml on the breath meter can you tell me what I'm doing wrong I don't really need to lose any weight at all. In fact, I need to gain some back actually.
So, what type of oils should we be cooking in? Olive oil, coconut oil, avocado oil, what oil?

I use refined organic coconut oil (no smell or taste), you really can't tell the difference. Fatty meats I cook on stainless steel pan with no oil at all.

Are you kidding? The likely reason the cooking shows don’t tell you which oils they are using is because they could receive severe criticism from people who think certain oils are good or not good. Just think of that the McDonald’s restaurants years ago used to use beef tallow to fry their French fries. They were hounded into changing to the “healthier” vegetable seed oils. other examples could be referenced. So is it really that hotel and some fancy restaurants don’t care and use cheap oils. Cutting costs can only be part of the picture. They may want to avoid the conflict and controversy. Some food managers may be uneducated on some of this. I think it is difficult to know what to believe about some things , and there is a lot of misinformation floating around also.

great discussion, but why doesn't this problem show up in human tests?
Maybe they have but because they are mostly paid for by big food companies, they may have not been published. Or maybe the data from the tests were manipulated, not done properly or for long enough. Seed oils can even be beneficial in small doses for a short period (3 months, say) but dangerous over longer ones.

I did not know that the language is used on your show is specifically for MD and chemist. I do not have the background on these topics and so it was not helpful. Also The doctor never explained hoe seed oils are made so why are the seeds such as almond sesames' or walnut good for us but the oil is bad? Never got explained after one of lessoning. 01/01/2025

Right, where are the randomized control trials showing safety of industrially produced seed oils? The whole randomized trial standard argument has been over used and overall strict evidence based medicine hasn't made for a healthier population.
It's the actual practice of medicine that leads to healthier patients. This means paying attention to nuance and actual mechanisms in the body .
