Ashley Alexander, this has been one of those game changer recipes for me!!! Thanks so much for sharing it. In addition to using it instead of mayo, I use it as a base ingredient for creamy dressings, like ranch and spicy ranch, in potato and chickpea salads, and even as a dip for crudites and crackers. It's easy to customize . Tip/discovery: I have a Vitamix and find it's not necessary to soak cashews or whip the aquafaba before adding the other ingredients. I simply put all the ingredients into my Vitamix and blend it on high till its smooth and creamy. And to quote you..."easier is always better". 😉 If I want a bit more "eggy" taste, for me adding just a little nutritional yeast does it. Thanks again and best wishes to you!

@7ruach9 I just use this same recipe replacing the cashews with soaked sunflower seeds. Be sure to blend until smooth. I also like to add a couple garlic cloves to my mayo. Hope that helps :)
Hi there! I am unsure of the answer to this, but my inclination would be to keep it in the fridge. Aquafaba itself needs to be in the fridge or frozen and I'm not sure how long the vinegar would stabilize at room temp. Just to be safe, I'd say keep it in the fridge :)

I haven’t tried either, but I imagine walnuts would be a good alternative, although it will alter the taste a bit. I’m not sure you’ll be able to get pumpkin seeds to be smooth enough for this. Let me know if you give it a go please!
Yes, definitely! But before you go and add 3 Tablespoons of apple cider vinegar, make it as is, without the lemon juice and see how it tastes. If you need some more zip, then just add in a little vinegar a bit at a time and possibly a bit more mustard and keep tasting it until it's the flavour you like :)

Hi there! Using chickpeas might work but it'll change the consistency and flavour of the mayo. I think it would be a bit thicker, less frothy and have more of a hummus flavour to it. Can also try pure Himalayan Pink salt instead of regular salt, to get an eggy taste.

Brilliant!! Can the ready mayo be stored at room temperature? Doesn't using vinegar act as a preservative?

I believe fresh aquafaba lasts for about a week in the fridge. I always freeze mine and then thaw it when I'm ready for it :)
