    I can't believe it!!! This is the best vegan mayo I've had ever!! Right now I'm enjoying it on cole slaw. Unbelievable. This really rocks as I have been missing good home made whole plant food mayo, but with this I don't feel I'm lacking anything!

    Ashley Alexander, this has been one of those game changer recipes for me!!! Thanks so much for sharing it. In addition to using it instead of mayo, I use it as a base ingredient for creamy dressings, like ranch and spicy ranch, in potato and chickpea salads, and even as a dip for crudites and crackers. It's easy to customize .
    Tip/discovery: I have a Vitamix and find it's not necessary to soak cashews or whip the aquafaba before adding the other ingredients. I simply put all the ingredients into my Vitamix and blend it on high till its smooth and creamy. And to quote you..."easier is always better". 😉
    If I want a bit more "eggy" taste, for me adding just a little nutritional yeast does it.

      Can also try pure Himalayan Pink salt instead of regular salt, to get an eggy taste.

      @@raa.1293 I didn't/don't measure. Sorry. We just add it to our taste preference. We probably use a teaspoon.
      Start with less, taste, then adjust seasonings to your taste preferences

    So glad to see you using the Aquafaba. Every time I open a can of Chickpeas I feel like I need to use the liquid but I never plan ahead enough to make something with the aquafaba. Great job.

    I admire your approach and practice much the same way, avoiding social media and always looking to other arts and crafts for my inspiration.       @@LivingFreeAshley Ashley, I found that I didn't need to blend the aquafaba first. Just put all the ingredients in the Vitamix and blended. It worked just as well.

    Aquafaba is liquid gold. I am totally trying this. Never thought to use cashews instead of oil . Brilliant.

    The amount of oil in store bought vegan mayo is disgusting! I am excited to try this recipe. Ive used aquafaba quite a bit but the mayo hasn't been one of them, till now. 🙏

      Hi there, I unfortunately don't have an oil free nut free mayo, but I believe there are tofu based recipes out there. I don't handle tofu/soy well myself, so I haven't experimented with it, but here's a recipe that looks like it may work: watchlearneat.com/oil-free-vegan-mayo/

      @7ruach9 I just use this same recipe replacing the cashews with soaked sunflower seeds. Be sure to blend until smooth. I also like to add a couple garlic cloves to my mayo. Hope that helps :)

    Brilliant!! Can the ready mayo be stored at room temperature? Doesn't using vinegar act as a preservative?

      Hi there! I am unsure of the answer to this, but my inclination would be to keep it in the fridge. Aquafaba itself needs to be in the fridge or frozen and I'm not sure how long the vinegar would stabilize at room temp. Just to be safe, I'd say keep it in the fridge :)

    Can i use any other nuts or seeds instead of cashew? I can consume only pumpkin seeds and walnuts. Thanks

      I haven’t tried either, but I imagine walnuts would be a good alternative, although it will alter the taste a bit. I’m not sure you’ll be able to get pumpkin seeds to be smooth enough for this. Let me know if you give it a go please!

    Can I substitute extra vinegar for the lemon juice? (Citrus allergy)

      Yes, definitely! But before you go and add 3 Tablespoons of apple cider vinegar, make it as is, without the lemon juice and see how it tastes. If you need some more zip, then just add in a little vinegar a bit at a time and possibly a bit more mustard and keep tasting it until it's the flavour you like :)

      I believe fresh aquafaba lasts for about a week in the fridge. I always freeze mine and then thaw it when I'm ready for it :)

      Hi there! Using chickpeas might work but it'll change the consistency and flavour of the mayo. I think it would be a bit thicker, less frothy and have more of a hummus flavour to it. The cashews give it a nice creamy texture. If you try it with the chickpeas, please let me know how to turns out. Thanks for watching!

      @@raa.1293 Unsalted is best, but if you have roasted salted cashews, that's fine too. You'll be soaking them anyway, which will do away with the salt. I'm pretty sure I've made this with roasted salted cashews before in a pinch!

    Odd that you add pepper. Should be white pepper. Too bad it's not thicker.

      Hi Paul, thanks for watching! Feel free to swap out white pepper for black. I've never really experimented with white pepper. The thickness was quite perfect for me. If you'd like it even thicker, you can reduce the amount of water. And I actually am an actor! Look me up on IMDB :)
