10 minute Snack Cakes - $1 Snack Cakes - Vanilla and Chocolate Cake Snacks

Easy Snack Cake Recipe - $1 Snack Cakes
- 75 g Butter (2/3 STICK)
- 25 g Oil (1 1/2 tbsp)
- 100g Sugar ( 1/2 cup)
- 2 Eggs
- 160g All Purpose Flour (1 cup + 1 tbsp)
- 2 tsp Baking Powder
- 120g Milk (1/2 cup)
- 1 tsp Vanilla
- 1/4 tsp Salt
- 25g (3 tbsp) Cocoa Powder
- 3-4 tbsp Milk
Bake cakes anywhere between 12-15 minutes. Use a 7 or 8 inch pan.
Chocolate Icing Shell:
- 400 g (14 ounces) tempered White Chocolate ( or any chocolate you prefer)
- 2 tbsp Coconut Oil to thin it out.

Never had one but can't wait to make! I really loved your mug pancakes and your microwave chocolate cupcakes. They are good for when I don't have much time and when in a bit too lazy to bust out a pan! It does get frustrating measuring everything but it's worth it.

Hi Emma. I love this recipe and will make it for my coworkers for Valentines' Day. Quick question: in your video, the cakes are iced and then you show one on an offset spatula, resting while you sprinkle it. Should the cakes each be held on the offset spatula until the icing dries? Or can we let the iced cakes rest on a baking/cookie rack? I don't want my cakes to have indentations from the baking racks and so I'm trying to figure out the best way to prevent this.
Hey love! Oh no no, just place them onto some parchment paper and let them dry on the paper. I used a mixture of candy melts/chocolate so my shells hardened really quickly. Recommened using that if u can, if not use tempered chocolate 😘
When the shells dry, they will easily pull away from the parchment paper
