- Bon Appetit's Senior Food Editor and pastry chef Claire Saffitz attempts to make a gourmet Twinkie without the hard-to-pronounce chemical ingredients. The first test is Genoise cake, an Italian sponge cake. For the creamy filling, Claire uses 7 minute frosting. The second test is yellow cake and buttercream filling. Next comes chiffon cake, a light cake that uses vegetable oil. Finally, with some help from Test Kitchen Manager Brad Leone, Claire decides to "Frankenstein" the recipe.

I asked him if he was sure and he said the British people said it differently. I told him it was a French word and to look it up. He did. And then looked up another. And another... And another.

I imagine all the stuff Claire makes is essentially what the original chefs intended to sell before their marketing person told them to make it as fast as possible, as cheap as possible, and let machines do it. Oh and make sure it has a shelf life much longer than edible things should have. Absolutely love this series.

Is no one gonna talk about how chill and nice this is? Like I know it's her job but she never got super angry or discouraged. Also there wasn't really any annoying music for the most part, and the times there were it was fitting. Not to mention that the way it showed her trials and errors in a really good amount of time was really cool. This is an idea buzzfeed would have but it's actually good quality.

It's literally indigestible. It's a solid brick of poisonous chemicals and dyes. It would kill a kid in Africa if you gave it to them. When in the trash, not even the ants or roaches will touch it. There'll be a neon yellow fluid coming off of it in a landfill somewhere in Jersey. It'll get shipped to China. They'll make fidget spinners that'll glow in the dark.

Why do you idiots keep throwing around the word “chemical”? Every food has chemicals inside of it. The chemicals that make up Twinkies are harmless and were exposed to them every day. Companies just use the scientific names for there ingredients because it makes it harder for the average person to replicate.

for cake
3 1/3 cups cake flour
2 cups sugar
1 tbsp baking powder
1 tsp kosher salt
1/2 tsp baking soda
2 sticks unsalted butter
1 cup buttermilk
2 tbsp vegetable oil
5 large egg yolks
3 large egg whites
1 tbsp vanilla extract
whisk together dry ingredients
add butter, buttermilk, and oil and beat on medeum speed unitil smooth. add egg yolks and vanilla and beat again until smooth and light.
whip your egg whites to stiff peaks and fold into batter
use piping bag to fill molds 2/3 full.
bake until risen and golden brown (about 20 minutes)
for filling
2 large egg whites
1/2 cup of sugar
1/4 tsp cream of tartar
2 sticks unsalted butter
1 tbsp vanilla extract
combine egg whites and sugar
beat over a double boiler until mixture is thick and white and 160 degrees. whip until cool.
add butter while beating on high a tablespoon at a time until mixture is thick and light, then add vanilla. transfer into bag with injector tip. flip twinkie over and squeeze evenly until you can see the twinkie expand

As BA presents most of their videos from their kitchen lab, I too would like to see the trial and error process as they make/create a recipe. My favorite BA vids, and primarily what I come to BA's youtube is for It's Alive With Bra. It's pretty much staged, they gave the game away when they made a souffle instead of a chiffon cake in the middle. They are just creating failures to create the illusion of experimentation.

Yes. Twinkies are disgusting. If you don't like it? Counteract her wastefulness by contributing money donations to charity food pantries. They can often buy in bulk at wholesale cost and feed a lot of people with more healthy options than a heavily chemically stabilized junkfood dessert.

The original creme flavor was banana creme. It was changed during WWII due to the banana-producing regions (Mainly in New Guinea - the Gros Michel) being overrun by the Japanese. The Gros Michel was also susceptible to Panama disease ( Note the U.S. changed to the Cavendish in 1947, which was resistant to Panama disease). So during the war, the creme was changed to vanilla creme which has a sweeter consistency.

I love watching these videos where she makes gourmet snacks, its so interesting. She's patient and she keeps trying all different kinds of ways until she's satisfied with the result and settles for nothing less. And I myself love baking and cooking so its also intriguing to me to see her process in making all the things she does. Dissecting the food and texture and really breaking down what it is.

The world's problems aren't with food production, they're with food distribution. Population evens itself out with food, especially with the farming technology that exists now. More people means more farmers, which nowadays one farmer can produce so much more food than one farmer 50 years ago. Again, the issue doesn't have to do with how much food there is, it has to do with the lack of that distribution of food.
