    8 Roma tomatoes, diced
    2 cloves garlic, minced
    ⅓ cup fresh basil, finely chopped
    salt, to taste
    pepper, to taste
    drizzle of extra-virgin olive oil
    In a large mixing bowl, combine all ingredients. Toss to coat.
    Serve on your favorite bread and enjoy!
    Per 1 cup, yields 5
    72 cal | 2F | 11C | 2P
    ► DIY PEANUT BUTTER:
    16 oz peanuts
    salt
    cinnamon
    other seasonings if desired
    Add all ingredients to a food processor and blend until smooth butter forms.
    Transfer to a jar to store.
    ► ROASTED VEGGIES:
    1 lb carrots, sliced into rounds
    1 lb green beans, cleaned and trimmed
    drizzle of olive oil
    salt, pepper, to taste
    Preheat oven to 425°F (220°C).
    On a baking sheet lined with parchment, add veggies.
    Drizzle with oil, season to taste, & toss to coat.
    Roast ~25 minutes, until softened & just beginning to brown on top.
    ► POTATO ZUCCHINI SOUP:
    2 large potatoes, peeled and cubed
    4 zucchini, cut into thick rounds
    drizzle of oil
    salt and pepper, to taste
    2 cloves garlic, minced
    1 cup water
    ½ cup broth
    ½ cup milk of choice
    Preheat oven to 425°F (220°C).
    On 2 baking sheets lined with parchment, toss potato & zucchini in oil and seasonings
    Roast both pans for 25-30 minutes, until vegetables are browning.
    Add oil and garlic to a saucepan over medium heat and sauté for 1-2 minutes.
    Add water, broth, milk, & roasted vegetables to saucepan.
    Bring to a boil, reduce heat to low, and simmer covered for 20 minutes.
    Once vegetables are fork tender, pour contents of saucepan into a blender or food processor & blend, until smooth or chunky as preferred. (An immersion blender works, too!)
    Season to taste.
    Yields 6 cups (4 servings).
    Per serving of 1 ½ cups:

    Great video. I liked that the foods packed a day's worth of nutrition as well. I've seen other videos for budget meals where they clearly would not be enough nutrition for a healthy person, so I like that you took that into consideration.

    I love this! All the recipes looks so very delicious. As someone who grew up on the poverty line I would mention though that a cast iron pan , food processor, even a blender, these are not things youll often find in a poor household. I would challenge on top of this challenge to make foods with only the absolute basic kitchenware.

The recipes were a way to bridge the two together with my channel and audience. These were never intended to be functional for the starving children in Africa- they are here for people participating in the campaign to understand the poverty line, conceptually.

      They could be appropriate, but it's best for you to know your health needs in terms of what's "allowed" or isn't. It depends on you!

    It is always neat to see how much you can stretch money, but it still doesn't account for all the tools and technology that we have access to. Many people who are living on this amount of money don't have access to stoves, ovens, and food processors. we are still super spoiled even with the limited budget.

    Okay question, what happens if you don't have an oven safe pot for your bread? Can I use a regular old cake pan and foil?

    Tried making the peanut butter.. it just wouldn't go past the grainy stage... yikes! How do you mess that up?!

      I've had different experiences with different food processors, and different brands of nuts. I find roasted peanuts work the best. In my old processor I had to let it go for over 10 minutes! So maybe just more time?

    Have you tried the cauliflower pizza crust from trader joes?

      I haven't tried it yet so I can't comment on taste- but I looked at the package and was disappointed to see 17g carbs per serving which was like 1/3 of a pizza if I remember correctly... then I looked at the ingredients, corn starch was a main one! Not that there's something "wrong" with corn starch, but it was deceiving, because a huge reason people want cauliflower crust pizza is to have less carbohydrates, and this is still relatively high for a vegetable base. It could still be an option for someone just wanting a gluten free or wheat free pizza base, but I fear people will think they are consuming "only cauliflower" and that isn't the case with that pizza, unfortunately :(

      You would just put the honey on :) This wasn't intended to be vegan, it ended up being plant based because of the ingredients used for the budget. It wasn't a commentary on veganism or encouraging anyone to follow a vegan diet because of health reasons, I just noted the fact that they were plant based for those interested. You can use honey or whatever other topping you prefer on your bread :) Cheers!

      Vegan by definition means not eating animal products or animal produced products - you aren't required to eat local to be Vegan. If that's how you like to do vegan that's great, but you don't get to decide that someone else is 'absolutely wrong' for not eating only the limited foods that are indigenous to their area of North America.

      @@nicolewilkinson1089 Eating local is cheaper. Which is the whole purpose of the video. It costs much more to ship products from different regions, continents, etc. so you end up having to pay for that in higher store prices. Similarly, eating local has a lower carbon footprint, since again there is little to no shipping needed. A lot of people specifically go vegan to curb their carbon footprint. It's also healthier to eat local since the food will be fresher, so that's important for people who go vegan for health reasons. Overall there's lots of reasons for vegans, and really anyone, to pay attention to sourcing.

    I had no idea bread was that affordable to make... how long does it last? I assume less time than store-bought bread, but I'd be much more inclined to eat this if I'd baked it myself.

    I LOVE this video and the one you did last year for this. I wish you would make more of the ones like this one and the one last year. I live just above the U.S. poverty line so while I understand the nutrition isn't great, the cost is perfect for me. I can't make most of your recipes because I cannot afford the ingredients.     I'm obsessed with such videos.
    Since I'm from Russia, it's still interesting for me to compare prices. Most of the people here live on $2-4 a day here (this is absolutely normal here, food costs less here than in the USA) and still eat very unhealthy diet.
    I personally spend around $2-3 per day and I always cook for myself. It's just easier and cheaper here, and however, it keeps food less processed x3

      It depends on the recipe-the peanut butter definitely needs a high powered blender or food processor, and the soup will depending on the texture you prefer. You could use an immersion blender, too.

      You can try a mortar and pestle. It will take much longer but it could work.
      I've done it before with very small batches after my food processor died mid processing.

    Thank you for the informative video. Just a message to those who complain about how the video isn't for the really poor family who can't afford blender, electricity and oven. I'm really sorry to hear that. I know it hurts because I experienced that and what's even harder. I'm here to tell you my friend I'm sorry u have to go through such a sad poverty 😢but come on how many vloggers did such budgeting videos that could help a mother who also have to go to college and work and still be able to have a good healthy meal and still afford to buy her kids a ticket to a park! These people are human and it's not their fault that some of us had to struggle through some extreme poverty 😪if you want to take out your anger then talk to the politicians who make can do so much just by doing some research to study what u can afford to make u sick and still benefit off of you when u r obese, sick, or healthy and paying the tax to go elsewhere to feed the wars that create more struggles around the world so that we can have a rich country with some of the riches 1% while the majority are lesser than low middle class! Please do the research before you throw ur anger to the wrong person 👩🏻‍💻 okay I'm done I have u get the message!

      I think you missed the point of this video- to bring awareness to the #PassMyPlate campaign and the AFCA organization. The recipes were a way to bridge the two together with my channel and audience. These were never intended to be functional for the starving children in Africa- they are here for people participating in the campaign to understand the poverty line, conceptually.

    I LOOOVE this! I am so glad you didn't take the easy way out and just have a variety of rice, beans, and oats recipes. These are so creative and diverse. Everyone always says eating healthy is expensive, even I did before I started to eat cleaner, but I realize that if you go to the store and leave out the junk food, frozen meals and expensive meats (steak, bacon) you save a lot. I love your channel so much and always get so excited when you have a new video. :) I would love to see a video for cleaner, at home coffee/frapp recipes.

    Could you do the bread in a regular bread pan or on a baking sheet? I don't have a cast iron pot

      You could use a glass dish as well, doesn't have to be cast iron.

      Remember that all Pyrex bowls can be used for baking. I used mine for bread all the time before my oven died.

      I just did Rachel the other day and came out just fine. My go to bread from now on because I cannot stand the long list of ingredients of bread in the stores. It really is easy and makes the house smell so delicious!

    I think these are great recipes, but I'm curious how the cost of these meals was calculated. $1.90/day x 7 days = $13.30/week. I live in Chicago and I definitely could not afford to buy these ingredients for $13. The bag of wheat flour and lentils alone would use up about half of that, even if I were to buy it in bulk. I know I live in a more expensive city, but the numbers don't add up for me.

      The challenge was considering $1.90 for the ingredients used per day, not going to the store with $13.30 per week. I calculated out the price per serving used of each ingredient to determine the total Hope this helps explain. Cheers

    While with a lot of. Savvy shopping you could get food for these prices but you could afford some of the equipment. Growing up my family went through a period of time when a max daily budget was $5 for four people plus anything else we needed. But in particular were out of the question unless they were on clearance. We ended up having to visit a local food bank which was a huge blessing. I know this video is old but if you can help a local food bank you should.

    i have a challenge for you. Go to the food banks near you grab what you can and spend $89 that is equivelant to food stamps. That is what my mother lives on with my neice and brother living with her and she doesnt think she can meal prep with what she gets

    I love these ideas. And, I am so going to try the lentil patties. You just gave me a new idea for my kids lunch. That is perfect. Quick Qs - 1) Red lentils - yours looked white when in paste form. Mine uncooked are red/pink in color. So just making sure. 2) for the bread, can I substitute bread flour or all purpose flour? I am not a fan of WW flour. 3) What's the shelf life for homemade PB? Do I need to keep it in fridge? Thanks.

      Awesome, thanks so much! The lentils were still reddish pink, perhaps the lighting was over-exposed. Bread or all purpose flour should work fine! :) The PB will last a few weeks to a month, I usually keep it in the fridge :)

    That bread was killer easy! I will try it. I used to make bread a lot but i couldn't keep up cause my family liked it too much and I work full time. that peanut butter with cinnamon! MY FAVORITE SPICE!! That soup looked glorious and nutritious! I love bruchetta! So fresh! Your veggie dinner was right up my alley! I wonder if they freeze well?

    Wheat flour ?! Please be mindful that grains ARE BAD for us. There are many tasty non grain (gluten free) flours like Coconut, Almond, Chick pea ! Make sure your Cinnamon is Ceylon Cinnamon and not the cheap Cassia which is BADfor us.

      This is a wheat flour bread, but I have many other gluten free (and some grain free) bread recipes, too! There are loads of non-grain flours, but we all have to make choices about what is right for each out our own lifestyles - what is right for YOU, no one else. :)

    Love that you did this. Was wondering about the macro/caloric intake before you mentioned it at the end. Did you do a breakdown? Would be interested to know how it fared, I'm guessing it hit macros or was close but was probably low on calories?

    I'm glad you are supporting for this cause. I volunteer for a food pantry. But I myself go to a food pantry sometimes, I hope I get to go tomorrow, my case manager has to take me. I budget $50=$60 a week for groceries, I'm considered low income. I do not however qualify to for food stamps anymore because the program is bankrupt.

      True, they are pricey! I think pili nuts are more expensive though. They were simply an aesthetic garnish. You can skip it if needed.

    Thank you so much for this video! The bread and soup in particular look delicious! I would like to point out, though, that people living in extreme poverty may be able to make bread but are rarely if ever going to have a food processor, much less a high power blender! Counting the blender as an investment made over a full year, i'm rather sure that puts you above the $1.90. honestly, i think this challenge is extremely problematic and, i worry, potentially even counterproductive to the cause of awareness about what extreme poverty really is, and that is definitely not your fault, as you didn't make the campaign--anyway these recipes look delicious and deliciously affordable, so thank you!
