Does the cost of dried vs. canned garbanzo beans take into consideration that the dried beans are "organic" and the can is not? I ask because when I searched their website, the organic cans, which are properly comparable to the dried, are $1.19 and not $0.79. That's a $1.73 difference and not a $0.17 difference between canned and dried comparable products.
Mind Over Munch I would love if you could do a KETO friendly week prep! I am a 3 person house hold. We spend wayyyy to much money on food every month and it's starting to get hard. We love love our deserts, and we love love rice and starches. Obviously we don't eat those! But we replace them with other veggies! But we really need help! Keto is high fat low low carb! We have a 2 year old who loves italian food and mashed potatoes! So hard to keep our picky eaters happy!

Follow me into fitness the thing though is usually when you buy more it's less. Whether it's a 2 for 1 deal or anything similar, you get essentially an upper hand. Living alone has been SO expensive because rarely does anything come portioned for one person, and it's usually more expensive if it does. Meal preps like this are actually super handy because it allows me to figure out how to use the entire frozen bag of veggies right away, where as you could do it in one night feeding four people. Believe me, the more people to feed, the cheaper it becomes per person. A standard meal for me usually costs about $10-$15 but the same meal buying ingredients for 4 people averages out to $5-10 per person, just due to the lack of waste etc

Of course, its lots of work to support a fodmap diet... but here is a good site that I've used with recipes that should fit the bill for you. Good luck!
A Wallace I usually just use my super cheap rice cooker. It takes a little while, but you don't have to babysit it, just look occasionally and make sure it has enough water.

Wow those prices are incredible compared to here (Ontario, Canada). Frozen fruit is minimum $5/bag, organic frozen cauliflower would be at least $5 as well, and the canned chickpeas are $1.25-$1.75 depending on organic or not.
You will be my saving grace! I'm currently unemployed and living with family, but things are slowly getting better. Once I have a job, I fully intend to meal prep to save money. Thank you so much!

My personal issue with with insulin and inflammation, so I have to suppress them. I have eaten all raw and all vegan in the past and it amplified my issues. There is a lot of research out there to support different ways of eating based on personal needs so I take no offense. Sugar, carbs, grains - they pretty much are not my friends anymore. I have had doctors test me prior to starting and after going for a year. I feel confident I'm not hurting myself, quite the opposite but also, I don't eat processed "atkins" style foods. Think paleo, but without sweeteners and potatoes.

This was awesome. I really love how you make it flexible so that it can be customized for whatever preferred way a person eats. I am plant-based and eat low fat, so modifying dinner was easy enough. One of my faves is to cook a massive pot of vegetable and bean soup on Sunday and eat every day for lunch. It's so simple but incredibly filling; plus, it worked well with this challenge. It's so helpful to have these ideas and recipes as a guide. I end up spending a ton of money on things that end up going bad, mostly because I purchase ingredients without a clear idea of what to do with them. Chickpea debate: You grabbed a bag of ORGANIC dried beans... vs the canned which are non-organic. That same bag of dried bean in non-organic should be like $1.99... even at whole foods so you math doesn't equate!
Yes you are correct and that's a great point! They only had organic dry chickpeas available, so this comparison is not entirely accurate because organic foods will have higher prices - I would like to do another comparison using non-organic dried and canned chickpeas! Thanks for pointing that out!

Drama_Llama_5000 If the uncooked beans are much cheaper than canned, I think sprouting it is a good idea since the nutricional value is enhenced when sprouted(so it's good for you and your budget, but it's not so fast).And *soaked* beans don't require a lot of cooking they actually need to be soaked because of the antinutrients...
I love this video! I can easily spend $50 on three meals total from Whole Foods (especially if I wander over to the food bar and prepared meals)! I love that you gave us some very nice ideas of things to make that will keep through the week or can be frozen. If I can't do a sensible meal prep on a Sunday, then I'm over-paying for food all week.

Absolutely love the breakdowns! You did so much work and research to explain things that we either heard the wrong info for (canned is so much cheaper, for example), or never think about in the first place but need to know. Thank you!
We do the same for Oats, just using rolled oats. Soaking them in 1 cup water over night with 1/5 large apple + cinnamon, 1/2 serving of ground flax, 1 serving of walnuts. (Mix the apples 1/8th chopped with cinnamon, 1 large apple makes about 5 x 1/4 cups) Total cost for 5 days is only about ~$2.50 ($0.50/day)(~350 calories, breakfast)
Tasty looking ideas! Soaking beans does take planning, but little effort. It's great if you want organic and don't want additives and firming agents and if your concerned about phytic acid. Add baking soda, (bicarbonate of soda) at the cooking stage to speed up cooking and help the beans get tender faster.
Love budget meal prep!!! My husband and I try to eat for $90 each week and have protein at least 6 days. It takes so much planning and practice but it's worth it.

Using a pressure cooker for dry peas/beans cuts down the cook time to 30 to 45 minutes. It's a must in our Caribbean households.

Marilynn Gabaldon I use dr. Bronner's to soak my fruit. I get an allergic reaction to the wax coating so it's a must to remove.

I usually cook my chickpeas in bulk and than freeze what I don't need for later.
It was great, but I'm not sure it was quite fair to compare the Organic dried beans to non organic canned.
Also remember that the dried is probably better for the environment because the cans are a lot of metal that takes a fair amount of energy to recycle.

I've stumbled across your videos and been on a TOTAL mind over munch binge - I'm learning a lot in ways that are forgiving of mistakes, generally easy to follow, and love your positivity! Since I'll be living on my own soon, meal prep is going to be very important for me to ensure I am properly (and comfortably) fueling myself for every day. This was awesome. I really love how you make it flexible so that it can be customized for whatever preferred way a person eats. I am plant-based and eat low fat, so modifying dinner was easy enough. One of my faves is to cook a massive pot of vegetable and bean soup on Sunday and eat every day for lunch. It's so simple but incredibly filling; plus, it worked well with this challenge. You can combine several meal preps, just freeze some of the soup for example and sub with dishes from other week preps.

Is there a super strong garlic tastes in the one pot rice. I just wanna know so I can use as a reference to adjust. PLEASE MORE ONE POT DISHES! Maybe even vegan ones (though I am not one one it is just fun to eat vegan every once in a while)
There is definitely a noticeable garlicky taste! I love the taste of garlic, ha - if you're not a fan, I would tone it back a bit. Glad you like the one pot dishes! I will be brainstorming some ideas :) And I agree, it's fun to eat vegan every once in awhile!!

Chickpea debate: You grabbed a bag of ORGANIC dried beans... vs the canned which are non-organic. That same bag of dried bean in non-organic should be like $1.99... even at whole foods so you math doesn't equate!
Yes you are correct and that's a great point! They only had organic dry chickpeas available, so this comparison is not entirely accurate because organic foods will have higher prices - I would like to do another comparison using non-organic dried and canned chickpeas! Thanks for pointing that out!

Drama_Llama_5000 If the uncooked beans are much cheaper than canned, I think sprouting it is a good idea since the nutricional value is enhenced when sprouted(so it's good for you and your budget, but it's not so fast).And *soaked* beans don't require a lot of cooking they actually need to be soaked because of the antinutrients...

I love this video! I can easily spend $50 on three meals total from Whole Foods (especially if I wander over to the food bar and prepared meals)! I love that you gave us some very nice ideas of things to make that will keep through the week or can be frozen. If I can't do a sensible meal prep on a Sunday, then I'm over-paying for food all week.

We do the same for Oats, just using rolled oats. Soaking them in 1 cup water over night with 1/5 large apple + cinnamon, 1/2 serving of ground flax, 1 serving of walnuts. (Mix the apples 1/8th chopped with cinnamon, 1 large apple makes about 5 x 1/4 cups) Total cost for 5 days is only about ~$2.50 ($0.50/day)(~350 calories, breakfast)

Tasty looking ideas! Soaking beans does take planning, but little effort. It's great if you want organic and don't want additives and firming agents and if your concerned about phytic acid. Add baking soda, (bicarbonate of soda) at the cooking stage to speed up cooking and help the beans get tender faster.

Love budget meal prep!!! My husband and I try to eat for $90 each week and have protein at least 6 days. It takes so much planning and practice but it's worth it.
There is a lot of planning that goes into budget meals, but it does pay off!! Healthy CAN be affordable! :)
