We made a test batch last night and the brownies are amazing! It seems like it needs a bit more flour than a cup. Ours didn't pull away from the sides while mixing and the center was still not set after 35 minutes in the oven. We are making another batch tomorrow morning and will adjust accordingly. We are cutting these in half and making sandwiches with a smoked cream cheese center.
Marion woke up and chose violence and I love her for that 😂😂😂 Also, I was thinking of maybe peppercorn infused brown butter which can then lead to a whole plethora of desserts 😊
Despite knowing my tolerance for heat is pretty low, and I've never had szechuan peppercorns so I'm unfamiliar with the numbing sensation, I am super curious about this dessert. I love the chili chocolate you were sampling, and heat/spice with sweet desserts is such an underrated combo. Shame this dessert likely wouldn't ship well to Canada...
I've never had baked Alaska myself but I recognised it in the thumbnail because in The Sims 2 it's a high skill dessert the sims can make. It looks like meringue set on fire and if the sim is not skilled enough it actually starts a fire. Edit: Marion's whole dessert seem quite complicated but I think I can do just the icecream part! I imagine it would be quite nice since I like all the individual elements already
Don't feel bad. Last week my mom said a fire in the microwave and it was quite a blaze. She worked almost an hour and a half to get the black smoke off. My mom really likes fireman. I was given a kitchen torch as a Christmas gift. Didn’t think i’d use it but damn, it’s so much fun, I basically torch anything I can now, for a little extra sear. Before I head off to test peppercorns & alcohol, I had a question - would you ever consider replicating a few of your epic Masterchef recipes on here? I hadn’t seen that til last week but you had such creativity & technique on the tasks - would love to hear which were your favourites and how you would approach them today? Cheers :)
I have to agree on the blow torch 😆 Highly addictive! And what a great suggestion. Oh my goodness I would do so many dishes/challenges so differently now! I'll definitely have a think about that. Thank you!

I discovered you on here maybe 3 years ago via my love of Thai & SE Asian cooking channels, then read last year that you were on MC Australia, but didn’t think of looking up the videos til last week. You had such a confident yet inclusive approach, esp in the Paris/Seine episode mentoring your talented young team mate. And no ego, even when you beat the pro chef. But I was blown away by the recipes, esp those ‘on-the-fly’ - would love that as a series. Cheers :)

We all catch up for a family dinner every Saturday. I'm into this, I'll do this but not for the family. They are scared of S-Pepper corns now after a noodle dish. Only see what I am guessing is red. Would love to know the difference between green and red Sichuan Pepper. Anything in a shot glass needs to be consumed in one hit, you are absolutely right.

The dairy in the ice cream also helps in lowering the intensity and not just the temp and sugar. Love this test kitchen type of videos.
