Would it be sacrilege to spin this recipe by flavouring either the custard or the cake? Chocolate and some kind of lemon/lime situation are my first thoughts. Perhaps even lemon, lime and bitters, using some of the bitters leftover from your chicken recipe the other day.

If you whisk the eggs before adding the other custard ingredients they’re less likely to form little specks.
If you use an electric mixer there won’t be unblended bits of yolk.
