Theon was fond of her and this was his misguided attempt at getting her to stay. He would have been far more effective if he had not been so prideful and just told her what he really felt.

Even then, she made it clear there was no future between them. He had no wealth or title and even if he did, she wouldn't be a proper consort for him.
