Do you know how it handles the mid-battle defections? Are they inevitable or is there a mechanic that may or may not keep them loyal to Ishida?

There is a complet rule on this topic. Just to give you an idea:"For every multiple of 10 SP loss inflicted on the opponent, a modifier of +1 is granted to the Eastern army, and a modifier of -1 to the Western army.
If the result of the modified dice roll is:
• Between 1 and 6, the division cannot be activated during this turn. Place an activation marker on the division’s Taisho for reference. This marker will be removed during the sequence of tactical marker removal and activation at the end of this turn;
• Strictly greater than 6, the division aligns with the Eastern army. It can be activated by this army during this turn and is no longer subject to changing sides;
• Strictly less than 1, the division aligns with the Western army.
It can be activated by this army during this turn and is no longer subject to changing sides."
