This well-balanced, patented jig provides extra stability when sharpening knives with long, flexible blades such as fillet knives. With the KJ-140 Wide Centering Knife Jig, you achieve a symmetrical grind with the same angle on both sides of the blade. Hi , I have a SuperGrind 2000 I bought from you in 2005 . I want to make sure I'm reading the angle guide correctly after watch many videos recently . I eye up the actual cutting edge bevel instead of the secondary bevel . I usually just match the existing bevel angle , but am trying to progress to a sharper level after watching videos and reading the Knife Deburring manual by Vadim ( RIP 😔 ) of Knife Grinders of Australia . I have watched every video from you on sharpening knifes and probably have missed this point , but please let me know as there are usually 3 bevels on most knifes . Thanks

Hej Rodger,
most of the time we establish only one bevel. Sometimes we add a second bevel which is then very small (a micro bevel). It is important to hone correctly and carefully to have a really sharp edge.
Three bevels are more like a convex bevel. This edge is a bit more ridgit against damages, but not as sharp as a single bevel one. Speaking about the number of bevels on each side.
