Among all the hawker delicacies that Singapore is known for, the one that demands the highest amount of skill to perfect is fried Hokkien mee.
The perfect plate of Fried Hokkien mee not only has to have an intensely savoury umami shrimp and pork broth flavor, but it also has to have be infused with the aroma of wok hei that can only be achieved by intense wok fire. and that is not all.. the final product has gotta be moist and soupy so that it can almost be savored only with a chinese soup spoon.

Thanks Kate!! I was just on Google maps (before I saw your reply) and I saw that Hokkien Mee!!! Sooo wet and gorgeous! 😄 was just there to Dapao Arnotts the other day. Just went to Toa Payoh Come Daily Hokkien mee and did an exclusive w them last week.. that’s my usual go to 😋
