Okonomiyaki and Tempura batters are usually made from flour and eggs. Okonomiyaki/ Ramen might be topped with Narutomaki, which is made from white fish paste. Also, sauces accompanying food may have fish/oyster/meat sauces in them. For those who are strictly vegetarian, ask the chef to skip everything from eggs to fish or search for indian/vegan options when in Japan.

My partner is vegetarian and I am not - I eat seafood and chicken. We cook only vegetarian at home and I love it, so much more than when I used to cook with meat. Anyone who thinks eating vegetarian is boring or can't sustain then is incredibly ignorant. Its so much easier to cook vegetarian and encourages you to find new and interesting recipes all the time. My skills at cooking, my knowledge and understanding of food has expanded so much since I started cooking vegetarian. If we go out and I eat not-vegetarian its a total treat and that's a nice positive to it also. We love love Japanese food and it usually caters to vegetarians here so we can't eat it whenever we want, but I've always worried/thought that may not be the case in actual Japan. We've been wanting to travel there, but I was worried my partner would not be able to find much vegetarian food to eat! its an issue we had while travelling in Europe, funnily enough though we found wherever we were if we could find a Japanese restaurant we could find vegetarian food. Watching this video has given me hope that yes she will be able to find good food to eat when we eventually go to Japan, thank you!!
I had the same worries before travelling to Japan but I was happy to have found enough to sustain my travel of two weeks. Pretty sure okonomiyaki has dashi in the batter! Also, it is more like a pancake rather than a pizza. Not vegetarian for sure. Also, as you mentioned both Ramen and Udon noodle soups tend to have copious amounts of dashi in them. If the restaurant owner says that the soup is vegetarian, it just means that they think that dashi is vegetarian. All sweet items are fine luckily. Also, if you are famished look for a Crepe shop or Italian cuisine restaurant. You can also eat Vegetarian/Vegan hot-pot, though this is harder to find. In the ryokan I stayed in, they did offer yummy vegetarian hot pot. Onigiri and Daango are fine. The greater difficulty comes when you go to interiors of Japan.

Vegetarian sushi is not a thing in Japan. Sushi is a fish dish. There are some restaurants in Tokyo that serve veg sushi like 寿司権八(search on google map), but there aren't that many to specify an area.
