I've had well done steak and filet mignon at proper steak houses and they were all juicy and flavorful. The filets were drier, but that's the nature of the meat.

Just like a reverse sear method. Started on low heat then high heat.. steak came out perfect!! Now that is a steak. Many people are too quick to judge how does it have a little bit of pink in the middle. Read the beginning of my statement and you would know how he well done steak is still soft and tender and has a little tiny bit of pink with juiciness. Kudos

A steak is supposed to not be well done because it has a rare feature: it can be undercooked to preserve flavor and moisture while being 100% safe to eat as long as it’s seared right. I understand that people like it well done, but try it at least cooked medium. It’s a lot easier to do right.
My wife would definitely send that back. She likes ultra well done. As long as its not dry. I like rare. I cook our steaks together. High temp. Sear for 2 minutes on each side. Take mine off. Turn the temp to medium and usually cover the pan. I let mine sit for 5 minutes. Turn the other steak. Eat my steak. Turn the other steak. Wash my plate and utensils. Turn the other steak. Drink a beer. Turn the temp back to high, keep the lid off and re-sear it for a few minutes. Sometimes thats still not enough.
lmao Oh man I feel you. Same thing here. I finally had to start searing then baking. Pull mine and my daughters steak out early. We eat ours. Hers still cooking. She wasn't happy about that though and suggested I start cooking hers first. I think we've figured out now she just needs to buy the thin steaks.
