- The wonderful Dane is back on your screens to share the recipe from one of our new favourite cupcakes - It's a rich chocolate, malty sponge filled with a brown sugar malty whipped cream, topped with whipped chocolate ganache and finished with malty biscuits and dunked in chocolate - IT'S SERIOUSLY GOOD!!
Makes 12 Cupcakes
CUPCAKES
70% choc 100g
60g veg oil
200g caster sugar
2 eggs
45g hot water
70g sour cream
60g malt
1/2 tsp vanilla
125g plain flour
1/4 tsp salt
¼ bicarb
FILLING
115g double cream
2 tbsp dark brown sugar
1 tbsp horlicks
Pinch salt
GANACHE
300g Milk Chocolate
150g 54% Chocolate
250g Double Cream
Malted Milk Biscuits
400g Dark Chocolate

I have a couple of substitution questions, as some of the ingredients I am not able to come by.
Double cream :
Could I substitute heavy whipping cream?
I know that heavy whipping cream has less fat than double, which could lead to a dry (or sometimes a weirdly greasy) cake and may impact the batter’s ability to rise. Could I add more sour cream (for the dryness) and baking soda (leavening agent) to make up the difference?
Malt Extract:
I cannot find malt extract. Can I use malted milk powder, dry diastatic malt powder, dry non-diastatic malt powder or dry soda fountain malt powder? If that is an ok substitute, in the recipe you use 60g of the malt extract, how much do you think you use of the powder?
Horlicks:
Online, I see that there is Horlicks original classic malt plain, Horlicks original malted hot drink, Horlicks malted milk powder, and Horlicks traditional. I don’t know what the real difference is between these since I didn’t grow up with this drink. Is there one preferred for this recipe?

Hey! Yes to the cream, horlicks and malt extract sub, I would check out the bourbon chocolate cupcake recipe and use the horlicks original in that. As I’m unsure the amount you would sub for malt powder because I haven’t tested it. And I would use horlicks original, in the blue tub. I hope that helps 🙌🏽

These are good. I made them as directed. They held up well in the fridge and were better the next day. Dane, have you ever looked at old copies of Chocolatier magazine? Lots of high end cake recipes can be found there. Top pastry chefs often divulged their recipes in that publication.

Thank you so much. It sounds simple, but I’d suggest turning the oven down a little, or it might be the setting. Some ovens have a top/ bottom heat setting x

Thanks! I’m unsure as I haven’t tested it with this. If you’re in the U.K. try in Holland and Barrett. If not and you want to use horlicks, I would use our recipe for chocolate bourbon cupcakes instead x

Could you please make some items with coconut? Its one of my favourite flavours, but it's so subtle that I can't get it to be really noticeable.
These look DELECTABLE! One question for you though... I have heard that European desserts are much less sugary than the USA. Have you found that to be true, or are they equally sugary?

How much should you cool the melted chocolate/oil down before adding the eggs?
I normally do until the bowl is cool to the touch :)

You could definitely replace with horlicks. I can’t say for certain how much, as I haven’t tested it with the powder vs liquid

Where are you looking? When I was making malt loaf I got malt extract in Holland & Barratt rather than in a supermarket.

I live in the USA and most of the recipes that Ive had for decades are in gm/ml. Get a scale. You won't be sorry and you may very well see a difference in the finished product. I use several different scales and one of the best that I have is a twenty dollar scale from Costco!
I'm American and once you go scales you'll never go back. It's easier, cleaner, and kitchen scales aren't expensive. Seriously, try it.
