      It's kinda the theme/point. He uses all purpose flour no matter what the recipie says for example. I think on some level he is trying to show that you don't need the exact 1 to 1 ingredients to try making things you see on youtube.

      To be fair, shepherds pie and cottage pie is basically used interchangeably in the US, mainly because lamb is so expensive, so everyone grew up to beef version being called shepherds pie.

      ​@@Master_Yoda1990 I must live in a weird part then, lamb has always been slightly cheaper than beef where I live(NY). A lamb roast($4) is usually $3/lb cheaper than a beef roast($7). But to be fair, chicken($3.5) is also 2x the price of pork($1.8). And goose($2.5) and duck($4) are surprisingly affordable.

    I haven’t seen anyone explain the joke at 0:21 so I’ll explain just for you mr Canoe. In the country of Great Britain baked potatoes are called jacket potatoes because the potato has a soft and squishy texture on the inside and the peel has a hard texture like that of a jacket. This is funny (especially in the context of this video) because Joshua is making a Shepards pie which is a traditional British food from the country of Great Britain. So when he said let’s remove the jacket he’s referring to what brits call the peel of a potato hence why the joke is funny. However, he has made a mistake as the peel is only referred as a jacket when the potato is in it’s baked form. This ads another layer to the joke that only British people will get as it is an amusing mistake. I hope you found this useful

    As a Brit who prides himself as a great home cook, with Sheppard's pie being one of my favourites to make... Do not ommit the rosemary! Plenty of rosemary is what gives this dish a great, unique aroma that perfectly compliments the LAMB! Peas are a must for me too, as is proper browning of the mince (improves the texture and flavour noticeably by spending 10 mins extra to brown it in 2-3 batches). Plenty of red wine too, I put at least 1/4 bottle in.

    Yes you need to wash your mushroom, or if you don't want them to soak up water you can peel the skin. But either way it is good practice to clean the mushrooms, you don't wanna eat dirt :)

    Proud of ye Canoe. Putting Joshua in his place about the difference in Cottage and Shepherds Pie. Cottage pie has now evolved to use sliced spuds instead of mashed spuds. The sliced spuds are the roof tiles of the cottage. We don't have Yukon Gold this side of the pond but I think the yellow colour is referenced in the name. O my good God, you didn't rough up the surface of the potato with the tines of your Ligma Fork to make the spuds look like lambs wool before sprinkling on the cheese.

      No, the difference is that shepherds pie uses lamb mince, and cottage pie uses beef mince. Both use mashed potato

    Here in the middle east we make something similar, we put a layer of mashed potatoes at the bottom, then the meat in the middle, then a layer of mashed potatoes on top, add a small eggwash on top , some people also like to add breadcrumbs, then into the oven and it's just amazing, we usually prepare a simple salad of tomatoes and cucumbers along side it

      I'd use pie crust or puff pastry on top instead of more potatoes, but that's just me.

    The reason why your mash was more yellow is because you were using yellow potatoes while josh was using white potatoes...Yellow potatos has anthioxanthins which is basically pigment with anthioxidants (anthioxidants hinder oxidation mainly to counteract deterioration in predominately stored food products) it usually mean the potato has more nutrients in it. Yellow potatos are generally sweeter and are more waxy than starchy which signify the lesser carbohydrates it has. White potatos are better for boiling and are firmer and slightly more creamy, but I think yellow potatos are better imo if you want that naturally buttery and sweet taste in cooking/mashing since they are best for mashing.

    The thing I like about this channel that for some reason, NO other big cooking channels do is that he doesn't use 500$ stand mixers, 200$ meat grinders, paddle attachments or pizza oven with an authentic pizza stone, a precision cooker or whatever else that people who are probably already chefs should have.
    This channel is down to Earth and easy to follow because he doesn't use machines that normal people at home wouldn't have in the first place. I love binging with Babish but every recipe has you getting a stand mixer or an expensive grill or dry aged something or another, with no alternative recipes that help the plebs like me follow along.

      The thing is, I really like to cook, but those channels mostly for those who don't. So it's about how beautiful food looks and how beautiful looks the process. So sad

      @@nighthawk2548 that's not what I'm talking about. Did you tried to cook with those channels? Imagine you're moved from your mother and think "well, I don't think cafe food is that good to pay more, so how's about cooking by myself", then you try to cook simple food and it's really nice. Then you think "wow maybe I can do something better", and search for recipes. And then you find those recipes with 20 mil views and 999999 likes and what do you think? "Oh, it's probably a good recipe". But it's (not always, but often) NOT. It has those views and amount of likes bc somebody who never cooked in their life watch, think wow so good-looking, probably delicious, let's give this a like, but 90% of those videos are awful when you try to follow. And you know how many ppl really tried and gave their reviews? Hardly few ppl but you probably won't find their comments.
      Sure, there's good recipes out there, but I think you can get my point. Mostly it's about making video looks good, not to give good instructions. And you will never know how good recipe and instruction is because almost nobody really try it, they just watch this on tiktok while scroll or watch this on youtube bc of idk what. And you may know those recipes has pretty expensive ingredients, that's part of the problem.
      And as first comment says, nobody warn you if your 20$ 40 years old oven can handle this recipe. Also you can understand it's for just watching, not cooking along because of missed steps such as "you should let it cool" or something like that.
      What I want to say, if you really want to cook something, avoid those popular videos. They just look good, that's why everyone likes it.

    The joke in the beginning is referencing something called a jacket potato, a dish often where the potato is roasted in the oven and cut in half, usually accompanied and topped by cheese and a side of baked beans! As for the pie you did and awesome job! A shepherds pie uses lamb mince, while a pie using beef mince is usually called a cottage pie!

    Best way to cook is by going to the store with a list and get everything you need. Then if you get home and find out you don’t have a few things then don’t worry about it. Cook what you have, not what you need. This guy gets that
