Once you're ready to roast, place potatoes into the heated oven tray, pour over the hot fat, Toss a little then roast. This way you're not picking up a tray of near boiling-hot fat from your oven and you're not having to dump potatoes into hot fat, avoiding fat splashes and burns. Also your oven will be more grateful.

I'm just not a fan of animal fat for roasts, although A5 fat was stunning. Olive oil and butter (plenty of) works perfect for me.
I tried duck fat once and find it intolerable. My sister-in-law absolutely loves it! Maybe if you’re raised with it. 😳 Olive oil and butter for me!

Lard works, also bacon fat, ghee, tallow, olive oil, whatever you’ve got. The flavor of animal fat is better in this context, but not required.
