Recipe:
Gluten-Free Cheesecake Crust:
1/2 cup (75 g) nuts or seeds of choice
1 cup (90 g) oats, gluten-free if needed
20 small (150 g) dates, pitted
1 tsp vanilla extract
1/2 tbsp coconut oil
Vegan Cheesecake Cream:
2/3 cup (100 g) cashews, soaked
1 cup (240 g) canned coconut milk
3 tbsp (60 g) maple syrup, or a different liquid sweetener
1 1/2 tsp agar powder, not flakes! + 1/4 cup (60 ml) water
1 tsp vanilla extract
2 tbsp lemon juice, or lime juice
3 tsp pink dragon fruit powder (optional)

I made this yesterday and it tastes delicious! I put in some strawberries & cherries to get the pinkish colour instead of fruit powder and used hazelnuts for the base. :)

Its a good cake! I use peanut nut butter to make the crust, it tastes like amazing Asian peanuts candy. I am not a vegan, so I use Greek yogurt and pear instead of coconut milk to make this gluten free wonderful cake, thank you!

I used coconut CREAM and some coconut yogurt with some Acocardo and could skip the Agar. But good idea with Agar for this.

Hallo Ela oder Mitleser❤❤❤, ich suche dringend einen Boden nach WFPB SOS, am besten ohne backen und kalorienarm. Ich will nichts ausprobieren und wegschneissen. Ich schätze mal die Amerikaner haben einen anderen Geschmack deswegen die Frage hier.
Habe ich gesehen das man den Boden mit Haferflocken macht, dann könnte man noch Chiasamen Nüsse bzw Nussmuss dazu nehmen, reicht das schon, das der Boden zusammen hält? Nüsse oder Nussmus möchte ich höchstens 50 g, da ich am abnehmen bin. Was könnte man noch nehmen, für ein leckeren Boden? Habe bei der Drogerie gesehen, das man 4 Korn Flocken bekommt, mit Haferflockem, Dinkelweizenvollkornflockem, Roggenvollkornflockem und Gerstevollkornflocken könnte man das auch für den Boden nehmen und vielleicht Chia und Leinsamen als Verbindung nehmen? Datteln geht der Blutzuckerspiegel zu hoch, ich nehme immer nur Bananne oder Yakon Sirup oder Pulver.
Hast du eine Idee bzw. ein Rezept Würde die Bananne nicht auch binden mit einem Musli? Muß man das Müsli zerkleinern?

Hi Nicolette, I never tried that, but I think it would taste lovely. You will most likely add a little more maple syrup then, to balance the bitter flavor of the cacao powder :)

Yes, it does stay firm due to the agar. It won't melt. :)

Hi Nathalie, no, that won't work, the agar needs to be cooked. It wouldn't be creamy if you use yogurt instead of coconut cream.

You can use any dried fruit instead of dates. Soaked sunflower seeds should work too. 💖

I can't use agar powder as I've been advised to avoid foods high in iodine due to a thyroid issue and so what might you suggest as an alternative, if that's possible in this case? I also need to avoid soy products:( It looks deicious and am hopeful you might have a solution! Thanks and take care.

I shake the can! You can drain the water for a richer cream, though :)

Hallo du Liebe! Ich verwende einen Zerkleinerer (food processor) aus USA (Hamilton Beach heißt die Marke). Den verlinke ich immer auf meiner englischen Seite. Schau mal bei Amazon Deutschland, dort findest du bestimmt ein ähnliches Gerät von einem deutschen Hersteller. Can I use whole flax seeds? Or will that give it a weird taste ?
I think you can replace a part of the nuts with flax seeds but not all of them. It wouldn't taste that good.

I don't recommend it as it doesn't contain much fat and the cheesecake won't be as rich and delicious.

Did you use the agar powder? If yes, it will set in the fridge. :)

CAN COCONUT MILK BE REPLACED TO ALMOND MILK
I don't recommend using almond milk (which contains mainly water), because the cheesecake layer won't turn out as creamy.
Instead of pink powder, would adding mixed frozen berries work?
Only if you reduce the amount of liquid in the recipe.

You can try, but other nuts won't blend as easily into a nice, smooth cream.
