I've made this twice. Both times everyone agrees, most tender gator they ever had. Also, unlike most fried gator that is best eaten within a few minutes of leaving the grease, this recipe can be refrigerated and reheated leftovers, if any, are as good as when first prepared.

I gotta say i absolutely love gator. I had a market in houston that specialized in sausage. I hsd a 30.00 a week habbit in gator alone. It was seasoned like thr best breakfast sausgage id ever had in my life. Didnt matter if i cooked 1 lb or 6 it never made it to a plate. It had no fat. 4lbs in a skillet wouldnt leave a tablespoon of grease in the skillet. I dont miss houston but that raggedy market is in my heart.
