Blackened Alligator & Comeback Dipping Sauce| How to Grill Gator Tail

  • Grilled Alligator Tail, or Blackened Gator as other folks call it, is easy to make and always a memorable dish for parties or dinner. Pair that with the Southern staple, Comeback Sauce, and you'll be fighting crowds to get your plate back. This video covers how to properly grill gator meat, as well as whip up a perfectly paired dipping sauce. Make sure to review the ingredients and supplies list below before getting started. If you aren't knee deep in the mud hunting gators, there are multiple specialty meat stores online that can deliver gator tail to your door in no time flat.
    Ingredients:
    1+ lb Alligator Tenderloin (Cut into Equal Parts and Pounded Thin)
    Blackening Rub of choice (low salt)
    Olive Oil
    Comeback Sauce Ingredients:
    1/2 Cup of Mayo (Duke's preferably)
    2 Tbsp. Ketchup
    2-3 Minced Cloves Garlic
    1 tsp. Worcestershire Sauce
    1/2 tsp. kosher salt
    1 tsp. Lemon Juice
    1 Tbsp. Blackening Rub
    Hot Sauce Dashes to Taste
    Supplies:
    Grill/Smoker that can maintain direct heat of 350-400 degrees (F)
    Mixing Bowl for Sauce
    Mixing Bowl or Pan for Seasoning Meat
    Tongs
    Temperature Probe

    Gator, the other white meat! I've had it once and really enjoyed it. Gator hunting makes sense, i bet there are a lot around there. I've only seen them in the wild once, at Cape Canaveral. Cool to see. Great job Texan, looks good!

      It’s hard to explain to those who haven’t had it, but dangit it’s good! They’re highly regulated in Texas as far as hunting goes. Tags are issued by the state solely to manage population growth. Thanks for stopping by my friend.

    I just acquired some gator and tried it for the first time. I was surprised that it actually does taste about like chicken and takes on the flavor of whatever you season it with. And it had a pork like texture. I eat a lot of different game and gator just became one of my favorites 😁🇺🇲

      Thanks for watching! Gator hunts are common here in the South where their numbers are regulated by the state wildlife departments. The state biologists run annual counts throughout natural habitats and then decide how many alligators need to be culled in order to maintain a healthy population. They then issue tags for the number of gators they hope to cull to hopeful hunters. Just doing my part and getting some great meat for the freezer in the meantime!

    Went to NOLA, had AMAZING blackened gator meat at Vampire Cafe on St. Ann's (just a shout out, but it is great and they are known for it). I live in CA, so illegal to buy or sell here but fortunately made lots of friends there and got a few lbs. Unfortunately...I didn't know what to do with it until I watched this video. I followed your instructions (used coffee based/gunpowder rub) and now all my friends want to go to gator country! Your instructions are perfect for the novice. Keep it coming.

    growing up in South Florida I've eaten Gator mini times and my wife's favorite is blackened on the grill. I use a seasoning called black and red fish magic that works great but other than that follow your recipe pretty much the same. beer batter gator is good and another dipping sauce that works well with grilled alligator is a sauce that we use for stone crabs

    Wow , that looks pretty good and never had gator! Sounds like a great combo with rub / sauce. We have rattle snake hunts in Oklahoma. 😳

      You should do a rattlesnake cook on your new sloroller. 😆I suppose it's a little dry in Oklahoma for gators, but there's always online butcher shops if you ever want to give it a shot!

    Looking forward to trying, I'm in Nebraska so I had to buy a 1lb. gator filet for 14.99, so I'm checking out lots of recipes cause at that price I don't want to mess it up..lol.

    That’s what I’m talkin about ! Love some gator ! Never had it blackened though and that comeback sauce sounds killer. Nicely done. Does UA-cam not monetize hunting? I see a lot of hunting channels/videos with ads.

      They don't monetize gun content and any content deemed "gory". Unfortunately all the photos of my gator from that hunt either has a large gun in it, or it's bleeding, so I just decided not to press my luck. Thanks for watching, Mike!

      You can get away with some cleaning your carcass content and hunting with a gun content but my understanding is that it constantly changes, so to me not worth playing around with. Awesome to hear about your hunt! What are you hunting?

    hi! in florida we lived in indian harbour beach and wud occasionally eat on the cocoa pier where gator was served as a appetizer being grilled and with some sort of barb q sauce and it was like eating tender ribs with no bones...aside from the rubs is there just a bbq sauce i can marinate in zip lock over night and then grill?

      Great question! I’d wait to put the BBQ sauce on either at the last few minutes of grilling or even after taking the meat off altogether. I say that only because if you want a sweet sauce, it’ll have sugar in it, and if you grill that sugar sauce too long it’ll burn and taste terrible. Use something simple like Sweet Baby Rays or anything people recommend locally for baby back ribs. Thanks for watching and let me know how it turns out!

      Happy to help! That sauce is addictive. I got invited to a private land hunt this go around but there are guides who offer trips for the season. It’s a tight window though, as the season only runs just for 3 weeks in October.

      Thank you! That’s pretty much why I started playing around with other alligator recipes besides the usual. Check your local specialty butcher and even liquor store. Our local liquor store has alligator meat for $20 a pound 😂
