How about some with a big slice of melted cheese in the middle? In Dunedin NZ they go mad over cheese rolls which are melted cheese wrapped in thin toasted bread. The cheese is mixed with evaporated milk.
Going to try this at Christmas. Two Christmases ago I did cheesy sausage rolls. Just big standard sausage rolls, but with a long sliver of cheddar running through the middle of the sausage. It tasted ok, but they were way too oily. Might have worked better with a lean beef filling.

Absolutely delish! I wonder which cheeses might hold up to baking better than cheddar? Im sure the taste is still subtly present but Id fear itd mostly melt away. Perhaps I’ll try a wee bit less Mizithra. I always admire Keefs homemade puff pastry.Im thinking Keef also uses lean beef here to keep pastry from being totally fat soaked. I love sausage rolls so I made mine with pork (sorry) 36 in all and all of them went down a treat at our Bonfire night party. So, thanks for the recipe (excluding the beef) of course lol
I prefer the taste of Tesco/Asda’s own brand yeast extract to the branded stuff. They seem to have changed the Marmite recipe a while back and it’s not the same any more
Hi, keef. Just want to ask you a question? I cooked a roast Pork joint the other day and I cut off that fat and put it to one side. I was going to make Pork Scratchings from it. Do you have any idea how to do this thanks? It's in the freezer now lol waiting for your instructions ;)

everyone says that for laminating dough, making sure the butter is cold is essential, but has anyone ever tested if it makes a noticeable difference? and actually forms layers like everyone says, or if it just forms into one mass. and by that I mean, can someone do a video where they do one with cold butter and everything's cold, and one where its room temperature
If you cut the pastry you can actually see the layers of lamination. I have fiddled with rough puff pastry and the colder your dough and butter will give you better results. The steam released from extremely cold butter is what you want to achieve and what keef did was a very good example of how it's done. Not good to do in the middle of summer ask me how I know 😆

Room temperature won't work you end up with very slippery dough that is simply unmanageable and hard to roll out butter squirts out and gets everywhere 😵

There is a bakery here in Te Awamutu called "Volare" who do award winning pork sausage rolls. Shame Dean Martin is not here to try them.
This is what I miss about New Zealand. So many award winning bakeries with amazing pies and sausage rolls.

I think turkey on its own would be too dry - it's very lean meat and you do need some fat in this...

Pork scratchings are made from pig skin. I don't think the fat will do you any good.🤔
I've never done it. I believe it involves salt and deep frying. I might try it one day...

Yes, most commercial Brit pies and pasties are made with puff. I just hate the way it explodes into flakes.
