- If you know Jacques Pépin, you know that he is a big fan of conserving food. This video for his famous fridge leftovers salad is the perfect example of how he is able to use even the most bedraggled vegetable from the recesses of his refrigerator through trimming, soaking, peeling and other methods. This episode is more inspiration than a step-by-step recipe, use it to bring new life to old veggies in your own kitchen.
What you'll need:
Leftover produce from your fridge! Jacques uses: bread, green onion, zucchini, radishes, mushroom (of course), onion, tomato, cilantro, olive oil, red wine vinegar

We heard one of you talking about this recipe in the comments last week, so here it is. Enjoy!
More or less it is the italian "panzanella"
@@giacomoboganini7823 You're right, it's pretty close.
Has Chef Pépin ever done a video on how to clean leeks when you want to cut them into complete circles/rounds? I only know how to clean them by cutting them straight down the middle & separating the leaves. Thanks.
Waste not, want not! You make everything look tasty Jacques.
@@dee_dee_place We'll ask and report back.
I've said this before, but would like to reiterate that my inner monologue has a thick French accent now when I'm making food. lol
Same. 😅
@@kqed Awesome! Jacques is such a great man.
Same here.I even throw in a few
"AND HERE WE ARE"
and "That's perfectly fine".
Chef J.P. has taught me to relax in my kitchen and occasionally enjoy a glass of wine while cooking.
I love him so❤❤❤
@@joannaedwards6325 Yes indeed. His demeanor is a top notch example of how to go about things.
@@hoosierflatty6435
Yes indeed. I used to be nervous/hurried and stuff would fall to the floor. So NOT the way to cook.😊
The more I learn about Mr. Pépin's life and watch his cooking at home videos the more I appreciate everything he stands for and what a valuable member of the cooking community. He is awesome!
Chef Pepin's home cooking and soothing voice is what we need in a dark time of uncertainty. Thank you to KQED for continuing the Cooking at Home series!
Thank you for watching!
Such high respect for food from him! He isn't one of those egomaniac chefs who will throw out a perfectly good plate of food in a tantrum because it isn't "perfect" or up to standards. One can say grace over any meal - indeed over every meal. He took a bunch of wilted vegetables, made the wilt go away and crafted a very nice dish. This is mastery! 👏👏❤❤
You said it beautifully!
Other chefs: "For this recipe, you MUST use heirloom tomatoes, olive oil from a remote village in Italy that was hand pressed this morning, and A5 Wagyu encrusted with gold flakes, with a first edition holographic Charizard for a napkin."
Chef Pepin: "Alright, lets make a 5 star meal out of some leftovers and a mushroom I found in the fridge. If you don't have mushrooms, that's fine".
That's the difference between a sea of fake chefs and a true master; they teach you what to cook, Chef Jacques teaches you HOW to cook.
I try to follow Jacque's ethos: Use everything!! He's the master!
I've been watching and learning from chef Pepin for 30 years or more. Back in the days when there were actually cooking shows on TV instead of the silly game shows disguised as cooking shows they produce now, you could learn so much from pros like chef Pepin. He's truly a treasure in the world of cooking and I appreciate he still is willing to impart his knowledge. Happy cooking chef.
Who'd a thunk that a Frenchman could become a king of America? Well done Jacques. Honi soit qui mal y pense.
I watch Chef Pepin every night. He is a treasure! ❤
Chef, you have amazing knife skills!! I will never through away any questionable produce from my refrigerator again…now after learning from you I can make an awesome looking salad like yours!! ❤️🥰
I feel bad throwing out old bread. Thank you for this idea! 😊
How nice to hear Jacques voice. I trust he is well.
Once again, Chef, I find myself grateful to learn from you. Thank you for teaching us all!
I do exactly the same thing. My Parents grew up during the Depression so they taught us kids, that throwing out food was a sin.
When making a salad, I usually add other stuff I always have on hand like beets, carrots, peppers, chopped almonds, cheese, & any cooked proteins I have as leftovers, & whatever aging fruit I have in the fridge, eg: oranges or peaches. I've never tried the bread trick. I usually make French Toast with stale bread. Thanks for the tip, Chef Pépin.
I always thought I was crazy for peeling the outer layer of fresh mushrooms. It's nice to see that Chef Pépin does the same thing.
This video showcases the reason I love Chef Pépin & think he is the world's best chef. He makes glorious meals out of just about anything. And the fact he mentions substitutes for items that he has on hand but we may not, is just fantastic. Thanks for all your cooking tips, Chef Pépin. I really appreciate them especially because I could barely boil water before watching your TV shows.
Ditto
The fridge soup and salad! I’ve heard him say that over the years and have adopted it every time I clean out my fridge😂
Why am I always watching Jaques before sleep? 😅😅😅
The most soothing sound. Better than any meditation app.
I honestly used to use his longer videos as a sleep aid. But with the ads that UA-cam has been adding, that doesn't work anymore.
I played all of Chef Pepin's PBS cooking shows in the background during the 2020 lookdowns. Soothing and practical!
I wish you well Jacques..been a fan for 36 years.....
Brilliant. An elegant salad from stuff most would discard. Still my chef god! 🎉
I hope to one day be like this man, what an icon and great example for us all
We did not have much money growing up and my Mother was 100% Italian. And just like any ethic cook, Like Jacques Pépin, sometimes you just open the refrigerator and whip something up. It's usually a new classic. Merci.
Everyone should get this kind of education.
With that smile at the end, you know he’s served a salad like this at a dinner party once or twice… probly got raving reviews for it too…😂
I love Jacques Pepin. 💕
I'll have to try this, instead of throwing things away. It looks delicious!
Merci M. Pépin !
I sometimes can't make the trip to the market and eat this way. Amazing how, if inventive, how little it can take to make a meal....if you're desperate enough😅
We've all been there!
Reminds me a bit of Fattoush, which is a Lebanese bread salad with greens, radishes, tomatoes, cucumbers and so on. In this case Jacques uses baguette instead of pita bread.
It is a sin to throw out food I was told a long time ago. ❤ what you are concocting.
Your recipes are so helpful for week night after work.
Love you Jacques and your great advice
You learn to do a lot with a little when you grow up without much.
Awesome....no matter what he does....brings back good memories of years past...
G.O.A.T.
I plan on trying this when I clean out the fridge this weekend. I look forward to seeing how different it will look!
I have done this so many times, long before I even heard about Jacques Pepin.
Other chefs will tell you to discard things like stems. Meanwhile, Jacques will transform them into a soup or sauce every time.
Thank you; great idea for those small leftover pieces
Thank you chef! I love these videos ❤
Looks good!
For the record- wishing both you and yours ( Storey especially) a nice 😊 day: again: wishing everyone a nice 😊 day ( USA 🇺🇸)
Couldn't love him more❤❤
I would ALWAYS chose to eat any leftover cooking that was prepared by Mr. Pèpin than a meal from a Michelin restaurant.
These Pepin videos give me such peace of mind. Thank you so much for providing this content.
Thank you for watching!
Looks Delicious Love your tasteful rooster plate too. TY
🐓
Thank you Chef !!
Great idea. Your the best. Thanks.
Thanks Jacques!
Amazing!
Poxa deu muita fome.😮
I’ll have you know I use the same sponges. Feeling very Michelin starlike after seeing that
😮👍👏👏👏👏
Looks great!
Are there some leftover vegetables one should avoid using together in a salad, tastewise?
👍
He’s awesome but my fridge salad would be pretty nasty… unless you like grape jelly and onions.
chefs Jaques Pepin cooking go to his recipes
A true national treasure.
I thought it was David Soul, uncanny.
mother called them "gotta go-es" Eat them - or they get tossed ...
Personally ,, I would have added some vinegar with the oil ,, Im just say’n 🤷♂️
Unfortunately, many of those human beings going hungry or starving are in this position by man-made effects and that are driven by irrational belief systems. However, there always seem to be chefs nearby to do what is necessary for humanity within their own might.
They always seem to be helping on the front lines when there is a crisis.
Waste not, want not.
I enjoyed this video but it would have been better had the host not had that speech impediment. He seems like a lovely guy but I'm not sure that he should be presenting with his speech difficulties. Love from Canada
With Joe Biden inflation, i dont have much in my refrigerator.
Joe Biden gave you tax breaks and stimulus checks while Trump gave billionaires and large corporation a 4.4 trillion tax cut. Biden has done many good things lowering drug cost, putting more people to work than ever before, keeping healthcare, Medicare, social security Medicaid that trump vows to get rid of....
Factually inflation is very low.
@Vbluevital Really? Your watching too much of CNN and MSNBC. Electricity up 29%. Gasoline up 48%. Milk up 14%. Natural gas up 27% Chicken up 24% Transport up 32% Airfare up 32% Eggs up 49% Used cars up 21% All since feeble Joe and his incompetent administration took power. Listen to real economists like Steve Moore and Steve Forbes. No more politics. This channel is about a great chef.
If you’re going to blame Biden for a global recession then I will too for the 3$ potato I bought here in Toronto last week! Bad Biden!! Trump would make everything affordable again!! 😉😋🫢🤮
@@q.taylor2921 You got that right. When Trump left office, inflation was low. Trump 2024. F this global inflation.
I like salad, but I'll leave this one for the diehard salad lovers!!!😂😂
Fair enough.
