Cantonese-style Steam Cod Fish - with Kikkoman

  • Cantonese style steam fish is a simple yet tasty dish that even beginning cooks can easily master. In this recipe video, I take you through all the basic techniques on how to slice the garnishing, firm up the fish and make the sauce.
    For the sauce, I used Kikkoman’s Special Fragrance Soy Sauce which is specially formulated for the local Singapore market. I find that it is very suitable for most Chinese recipes.

    INGREDIENTS:
    Cod Fish 2 steaks (500g) - bit.ly/LazCodFish
    Chinese wine 1 Tbsp - bit.ly/LazShaoHsingJiu
    Black Vinegar 2 tsp - bit.ly/LazBlackVinegar
    Gp A
    Kikkoman Special Fragrance Soy Sauce 3 Tbsp - bit.ly/LazKikkoSpecialFragSauce
    Rock Sugar 1 Tbsp
    Coriander Root 3
    Chicken stock powder 1 tsp
    Water 1 cup
    Garnishing
    Ginger 3 inches sliced thinly
    Spring Onions sliced thinly
    Red Capsicum sliced thinly
    Peanut or vegetable oil 2 Tbsp
    METHOD:
    1. Salt the fish (curing) for 10-20 minutes and set aside.
    2. Slice the ginger and spring onions
    3. Slice the capsicum and put it in cold water
    4. Put Kikkoman Special Fragrance Soy Sauce, coriander roots, water, Chinese wine, chicken stock powder, rock sugar and black vinegar in a pot. Simmer and boil for 15 minutes.
    5. Pat dry the fish and dress in Chinese wine
    6. Steam the fish for 8 minutes
    7. Remove the coriander roots from the sauce
    8. Wash the fish with hot water
    9. Heat vegetable oil
    10. Pour hot vegetable oil on the fish and garnish with ginger, whites of spring onions and red capsicum

    Made this exactly minus the special sauce and it was amazing! Reminds me of my favourite dish in Chinese restaurants which is steam fish!! Thank you for sharing!

    It s really yummy by using salt and wine to remove the smell, although I havnt made the same sauce. Thx for sharing. I ll try this sauce next time.

    I used your method but used supreme soy sauce instead of kikkoman, skipped alcohol containing ingredients and kept the water after steaming the cod. Turned out really well. Thank you 🙏🏾

    Honestly I used to receive blocks of frozen cod from Taiwanese fishing vessels, they said just add salt or soy and steam. Indeed is really good

    kikkoman tastes so much different from Chinese soy sauce, because it uses primarily wheat. It is less savory but has a more floral taste with a higher alcohol content. I can't imagine being horrible, but it wouldn't be my first choice with style Chinese steamed fish.

    Hi, have seen his past videos but never try any recipes. So I did today, his sauce has a individual characteristic, different from the restaurant mix. Resturant ones are usually thichker and more concentrated. Doctor one is made to measure, the sauce is clear and and has a unique taste of its own. I have never seen corirander being boil and infused into sauces . I like the clear sauce and I am enjoying it.

    hey1 mayI stir fried the shredded ginger & the spring onin first instead of pouring oil over it to bring out better aroma?

      Sure you can, but this method is practiced by Chinese Chefs almost universally, and works well. There must be a good reason why they don't do it the way you suggested. I think it may be that you want a fresh ginger aroma instead of a cooked one.

    If it's fresh not frozen cod fish, actually the water released while steaming won't be fishy, it actually adds unami into the sauce..😍 Cod fish it's the best, but quite pricey.

    Wow Doc...the recipe looks so healthy. I wanna to try this out as I have a nice red snapper in my fridge. Question: What is this Kikkoman special fragrance taste like - Its not available here in Australia so I'm trying to reproduce the taste... is it fragrant in terms of being fruity/flowery ? Or is it the Umami like taste. Or...?

      its a sponsored video. Any soy sauce will do. Kikkoman is a known good quality brand though.

      You can use the normal Kikkoman which should be available in Australia

      @@XiaoKyonko yes agreed. I have tried all kinds of brand over the last ten years and I switched to Kikkoman after Lee Kum Kee had a problem with their oyster sauce and never looked back. Cheers.

      @@ieatishootipost thanks Doc. The only reason I ask is because Kikkoman has a range of soy sauce all with different finishing taste. For the umami taste I tend to go with Obento Terrayaki marinade/sauce. The trick of throwing away the steam fish water was really good - no fishy smell or taste. Also Cod is an impeccable choice for steaming...

    The fish sauce, add in fried garlic and green onion smashed. After simmer, shift, the sauce set aside for pouring. The oil pouring, I perfer to use fragrant oil (shallots or garlic). Ginger Slices (fresh or fried), I perfer fried

    The fish juice that comes out is tasty leh. Everytime drink finish one. Pour away abit waste IMO

    If you dislike the "Fishiness" so much then Dont prepare or eat fish. You must hv Repeated d word Fishiness a hundred times. Very Boring to watch you fidget & squirm like a vegetarian who is forced to eat meat.

    Dr, curing the fish with salt to make it firm is how my mother taught me 60 years ago in Singapore. She didn't learn it from Japan, so it must be some Chinese method too.

      I am sure it is a technique known by good cooks all over the world. However, it's the Japanese that really emphasize it and make it a common practice.
