Thank you so much for your recipes. We love your coconut flour options as we try to avoid almond flour. We have made the coffe version. We then made a mocha cake by cutting the coffee in half and adding a 1/4 cup cocoa powder. Next was a chocolate version omitting the coffee, increasing the cream a little, and adding a 1/2 cocoa powder. Then a vanilla version, and now a spice version (2 tsp cinnamon, 1/2 tsp each allspice, ginger and nut meg, 1/4 tsp clove and 1 tsp vanilla). We have developed a froasting recipe that has the texture and taste of the real thing. 1/4 cup room temperature butter and 1/4 cup room temperature cream cheese. Add in 1-1/2 cups powdered Allulose in stages, beating well with each addition. Then vanilla, a pinch of salt and a few drops of liquid sucrolose if additional sweetness is desired. You can also add cocoa powder and other flavors. The key is the powdered Allulose. Unlike erythritol, it will not crystalize, and after a few hours it will completely disolve, giving you an extremely smooth texture that is just like frosting made with 10x sugar.

I have just made this with coconut flour, coconut milk (Kara brand) and olive oil. My focus is on DF and GF so I used golden caster sugar which I have on hand. The cake is very delicious and very moist. My egg size is 60g with shell.
I tried both coconut and almond flour versions and I love the coconut flour version, very soft and moist. I found the almond flour version is too dry and grainy (maybe I need to grind my flour). But I love the coffee taste.. ❤️

Hello! Was quite excited for this recipe and tried making it yesterday but after tasting actually found the coffee flavor quite overpowering. Should the coffee be in tsp? Also as someone else mentioned my cake was mushy too, I used sour cream and egg substitute. Perhaps I should have used less of each or cooked at a higher temp?
It does look delicious but a little dry ☝️😊 it needs some Swerve brown sugar syrup on top. Just mix equal parts sweetener and water and brush the cake.
I tried this recepie with coconutflour and it turned out beautiful! The cake turned out super moits and the taste of cofffe was reallt nice. I added walnuts and coconutflakes on top for some crunch and it worked so well. If your baking for special occations I'd deffenetly think that the buttercream frosting would be delicious and very teramisu like! I want to make a chocolate version, is there any additions or swaps youd recomend? Thank u for this!

Hi, hope u see my comment. I just made this w coconut flour. I followed the measurements as described but i found my batter to be more dense than what is shown in your video. Were you perhaps using almond flour for the vid? Anyways, ive sticked it in the oven. Hope it turns out fine 🤲
Some coconut flour are more absorbent than others hence, the batter will be thicker. It may still bake up fine but I suggest you try other brand then stick to the one that gives you the right consistency.
Thanks ! I have been using a built in oven for over 10 years and it's still working very well. I believe its convection as it has upper, lower heat and fan functions. It has 3 layers of racks i.e. lower, medium and upper rack.

Ground beans do not dissolve instantly like instant coffee so no such would not work but you can brew some coffee in place of the instant coffee though you'd want to brew it strong. You'd use the same amount of strong brew as you would the amount of instant coffee indicated in the recipe.
Tried that recipe yesterday but the result is very watery... Are you sure about the quantities regarding the coffee mixture (4tbsp coffee and 30ml hot water) ?

Yes it does at a moderate level. If you want a stronger coffee flavor you can add more instant coffee powder but it will be more bitter so you may need to add more sweetener
I made the cake with the coconut flour and really enjoyed the taste. I made 1 1/2 recipe and used an 8” spring form pan. I didn’t make the buttercream icing but will definitely try that with the next bake. This recipe is a keeper.

Uh, the frosting recipe should be 1 cup of Allulose, NOT 1-1/2 cup.

Fabulicious! Used half coconut half almond. For volume. Need to heat butter for sugar to dissolve well and melt coffee granules in tbsp water.

Yes that's correct. Did you use coconut flour? The batter is not very thick but it's not watery. It sd be moderately thick. How was it after baking?

Try to weigh the ingredients for accuracy. If you still find the batter watery, you can try to reduce the amount of whipping cream

This cake looks delicious. I curious as to why when using coconut flour you use only 1/2 cup but with almond flour, the recipe calls for 2 cups.
Coconut flour is very absorbent hence, needs more eggs and liquid. It will bulk up after absorbing all the liquid so only a small amount is required.
