We tossed or donated all aluminum and coated pots and pans last year.
Now it's 100% cast iron, stainless, or Pyrex/ceramic.

Try carbon steel pans. Lighter than cast iron and can be made non-stick with proper seasoning. A little butter and egss slide around like non-stick pans.
