I've had the older American Harvest dehydrator for many years and bought 10 extra trays for it. Mine has the heating element on the bottom instead of the top. I usually make a big batch of jerky right around Christmas time to give to neighbors and friends. I haven't made any in a long time so I'm getting the itch to make another batch next week from just watching this.
I am enjoying the cookbook and have done many of the recipes. Can't wait for the next one.

I have been using American Harvest/Nesco dehydrators for several years. (20 +?)
In all of that time I have never used ground beef, or packaged jerky mixes.
I prefer using London Broil, sliced very thin, but sliced cross grain, with my own marinade that I have developed over the years.
I also load my 10 racks much more densely than you did.
But if we all did things the same, it'd be a boring world.

This was my first time making jerky. I kept pausing the video and followed along. :o) I used a bunch of little packages of different types of meat I had in the freezer: beef, pork, turkey & chicken which made 3-1/3 trays in my Nesco (Just like yours). I just started cooking half an hour ago, so It will be late tonight before it's ready to sample. Thanks for the simple, easy-to-follow instructions. Much appreciated!

I truly enjoyed how thorough your video is! I usually purchase very lean cuts of beef… I have 20# s of it frozen in the freezer… maybe tomorrow I’ll go grab some hamburger meat… pull out my grinder and try 1/2 and 1/2…I made a batch yesterday of the lean, sliced and pounded flat jerky… it tastes great… but pretty tough:(

And what's cool is if you don't have a dehydrator, you can use your oven, just set it on the lowest setting, anywhere between 150-170 degrees...takes about 5-6 hours t make, I make them fro my kiddos all the time, I do the teriyaki flavor

This is funny. I just bought 2 Frankford Arsenal dehydrators for drying wet-washed fired ammo cases. They look exactly like the nesco dehydrators on the counter. 1/5/21

Good recipe, I never thought of using ground. You might try having your butcher grind a very lean piece of meat to reduce the grease.

If anyone else likes mustard seeds like Red and me, go to an Indian store. You can get a big bag of mustard seeds for the price of that little bottle he has. Mustard seeds are used a lot in Indian cooking.

I just did 5 lbs of ground beef jerky, i used a kit for 5 lb batches, i used a GUN and it came out just as fast but was even and uniformed and took less time to dehydrate. Took 5 min to clean the gun. Not trying to go against this guy but the GUN works very good. I have the exact same dehydrator, You can do without the GUN, id use 2 sheets of plastic and rolling pin to get even flat

How long will they keep outside of the fridge? . Thinking about making for a 7day backpacking trip.
If you store beef jerky in a Ziplock bag in your pantry, it'll last about a week. And, if you store your beef jerky in the fridge, you can expect it to last one to two weeks

captnkurt83 anderson Mustard seed is what he picked up and added later. I’ve read that celery powder (seed?) can be added to jerky marinades to extend the shelf life rather than using sodium nitrate curing salt.

The jerky guns are a big waste of time an money, always having to mess with it.i put a plop between a ziplock freezer bag sides open an quite a ruler on each side to quite rhickness,roll.lift up baggie an done! The freezer baggie.gallon size.take to nesco set on rack peel an done!

Celery seed is used in place of the pink curing salt, AKA "Prague powder" and is a natural curing agent, just not as strong.
People extremely concerned about all natural/organic will skip the pink curing salt, though so very little is used and it is a naturally occurring substance. But you only need pink salt if you're dehydrating under 165°F. and plan on storing it for any length of time.
