We use to sail out to Deer Island and occasionally Horn Island which is a ways out. I might move back in my 60's from here in Virginia. Love the food there, the beach, the ocean. I have a similar recipe with a few more ingredients(+ some liquid smoke)I thin slice my meat and then into smaller pieces(easy to sneak into work),while marinating I use ziplock gallon bags and mix it every few hours(throughout 24hr) and one of my dehydrators don’t have a temperature setting so I have to watch it all day

I just bought the Vacuum Tumbler off Amazon to quickly marinate beef, chicken and pork. I know i missed the giveaway by a year or 3 but love this video and your others that i recently found. I just started making jerky and got some great tips, Thank you
We used to vacuum marinate multiple flavors of same species meats at the same time, in the same tumbler, such as 40 lbs of bnls chicken breasts into lemon pepper, cajun, garlic, and chili lime by putting them in separate heavy duty resealable bags. The meat still soaks up the marinade in the bag while under negative pressure in the tumbler. No mess to clean up, just dispose of the empty bags, it works on jerky too. The vac tumbler was just a normal 50# Hollymatic. I had to laugh when I watched, after much trial and error over the years, I ended up coming up the very same ingredients for jerky, but I add onion powder too, just in a little different proportions and also use eye of round too. Good luck, you have a good product, may your business keep being successful.
Thank you. Great video. Looks and sounds like a great recipe. I look forward to making some. Thanks for the recipe, and the great tips you provided. I hope your business is a great success. Thanks again! God bless.
I do not use the soy, but I do use a little apple cider vinegar. Also I like a little liquid smoke, garlic powder, onion powder, a little mustard seed along with the Worcestershire. I like to flatten my quarter inch sliced with the grain, down as flat as I can get them, using two pieces of plastic cutting board from the dollar store, and a 22 oz framing hammer. The jerky comes out shoes leather tough. The reason I like it like this , I can cut it into bite-size pieces and chew on a piece for a week, or until I get tired of chewing. I appreciate your presentation.
Pro tip: If you don't have a dehydrator or a smoker, you can use an oven. On the lowest setting possible, usually 170-180, the secret is to crack the oven open a bit for the first hour or two. As the moisture comes out it will steam the jerky if you don't vent it. Once it stops dripping and starts to dry you can close the oven and walk away. This guy is spot on though; lots of marinade, consistent thickness and mixing the marinade over a day or 2 is best. After about 2 days the proteins start breaking down and it gets too tender. The surface tends to "pill" and is dull instead of shiny. It's still good but doesn't have that nice jerky shine and snap when you bite it.
And if you take out the bottom rack you can use small wire hooks or clothes pins to hang your jerky from the upper rack. If you put a cookie sheet or a layer of foil on the bottom of your oven mess is negligible.
debunkthejunk1 that’s how I make jerky is in the oven, works great. I leave the door cracked the whole time tho when I make it. I put foil down for the first hr until it stops dripping, helps keep the oven from getting so messy.
Thank you very much for. Mentioning the important info of taking extra precaution also heating the beef jerky to the oven for a few minutes to insure it's safety. I had a friend just beginning to dehydrated and did beef jerky w alot of fat and it molded in a zip lock bag after 2 days. I'm so glad i didn't eat any of it.

I was just explaining to another connoisseur of flavor ,as to marination tricks, before homes had seal-a-meal,we went ol skool, and reversed the whole thing to get the same result as vacuum marination.Old skool pressure cookers,on pressure,no heat, thus, basically pushing flavor thru the meat in 1/3 the time.i cant imagine how much a pro baby like that one your using would cost.I am an artist as well as cook, and needed vacuum devices to de-gas resins, rubber, dental stone, etc. ,and almost always made them myself.Boxes, pots, cabinets, closets, and most of all 1960,s pressure cookers the best.i do like that pre-made pot tho,its nice, and fancy lookin.
He talked about his mother cooking no grilling. Just like my mom. That statement is the reason I finished watching his post. I could just taste my mother cooking her round steak. That was a great memory. I really enjoyed the whole jerky process I tried to write it all. I love jerky and have tried to make it in the oven didn't make it so I just cooked the meat. Haha

Thanks very much for the kind words Frank
Wow that's a great jerky cutting device, is it hard to clean?
Mel Hardee it breaks apart easily and can be cleaned quickly. Thanks for watching! -Brian
Thank you. Great video. Looks and sounds like a great recipe. I look forward to making some. Thanks for the recipe, and the great tips you provided. I hope your business is a great success. Thanks again! God bless.
Thanks Tina and thanks for watching! Glad you found it useful!
This much the same as my brother makes. Myself, dry rub and the smoker on low gives me what I want. Thank you for taking me along, Jaxx
Not a problem at all buddy,
Thank you from Holland
You guys made my mouth water!!
Thanks man. I hope it was a good thing! :)
That has got to be some good stuff. You may need one of those slicers as well as one of those tumblers
Hahaha I agree!
Fun video. Love the southern accent. Now I’ll love the jerkey
ive just made my 3rd batch today......soo GOOD..👌👌👌
Enjoyed the video , jerky looks great . Very informative for beginners . Thanks for sharing.
Thanks for the tip my friend.
@@JaxxDrinkwater Thanks for making this video. Great information for people looking to get started and for those looking to up their game.
Shawn Sisler I put a toothpick thru the meat then hang it thru the oven rack, works great 👍
First time see how to make jerky. Thank you so much for this video.. can’t wait to try and learn more about all these great food. Thank you again. 👍👍👍

My husband loves jerky and I love these types of how to videos. So interesting. Going to go sub his channel now. Hopefully I get get hubby and my stepdad some
Hey sorry for the late reply cricket I hope you give the jerky a try,
QUESTION : when you said a few minutes in the oven at 260-275 after taking it out of dehydrator . Approx how many minutes please ? Should we store on shelf or fridge . I’d love to have more info on storage such how to store. Ziplocks vs glass , shelve life etc…
Thank you
I have the same question - 5 minutes? 10 minutes?
@@jamesdb5596 i did it for 4 minutes on preheated oven 👍🏻

Where is this video ... so I can see it.????
Why didn't you add some liquid smoke? That gives a great flavor use hickory or mesquite for a sweeter tasting jerky.
So I watched, learned and went directly to Academy for the jerky slicer! Yay you!
That jerky slicer changes everything! Enjoy your jerky!
@@JaxxDrinkwater I will be making EMU jerky.
" Huston, we have lift of". I'm uk so never seen this , apart from Westerns. Live & learn.
Thank you for the comment my friend.
Haha
Elaine, thanks for commenting. This made my day! -Brian
