⬇️⬇️English recipe follows⬇️⬇️ 快趣羊腩煲 材料: 急凍羊腩粒2磅 薑一舊 芫荽碎適量 處理: 1. 羊腩粒,清水解凍。 2. 薑,去皮,切厚片。 3. 羊腩已解凍,分開一件件,倒去水分,加入粗鹽2茶匙,醃10分鐘,去除雪味及羶味。 4. 羊腩,清水沖洗乾淨,擎乾水。 5. 預備一鑊清水,加入羊腩,開大火,並加入: a. 紹興酒3湯匙 b. 粗鹽2茶匙 出水至起泡,逐粒清水洗乾淨。 6. 預先煲滾清水一升半。 7. 預備好煲仔。 烹調: 1. 白鑊,加入羊腩粒,炒至乾身,加入薑片,轉最慢火,加入調味料: a. 柱侯醬一湯匙 b. 豆瓣醬一湯匙 c. 生抽一湯匙 d. 蠔油一湯匙 e. 冰糖一大粒 f. 老抽1/4茶匙 轉大火,炒勻,加入大滾水蓋過羊腩,大火滾起,冚蓋,轉中慢火,燜30分鐘,熄火,焗半小時。 2. 羊腩粒已燜腍,開大火,冚蓋,燜至醬汁稠厚。 3. 另一邊,燒熱煲仔。 4. 羊腩,倒入煲仔,大火滾起。 5. 完成,灑上芫荽碎。 6. 伴以辣椒油食用。 7. 完成,可享用。 Lamb stew (easy recipe) Ingredients: Frozen lamb brisket cubes 2 lbs Ginger 1 No. Coriander cubes appropriate amount Preparation: 1. Plain wok, add in the lamb brisket cubes. Fry well until they are dry enough. Add in ginger slices. Turn to the lowest flame. Add seasoning: a. Chu hou paste 1 tbsp b. Chili bean sauce 1 tbsp c. Light soya sauce 1 tbsp d. Oyster sauce 1 tbsp e. Rock sugar 1 big cube f. Dark soya sauce 1/4 tsp Turn to high flame. Fry well. Add in boiled-up water just covering up the lamb. Heat up at high flame. Cover up the wok. Turn to medium-low flame and braise for 30 minutes. Turn off fire and leave it for half an hour. 2. The lamb has been softly braised, turn to high flame. Cover up the wok. Braise until the sauce becomes thick. 3. On the other side, heat up the pot. 4. The lamb, pour into the pot. Heat up at high flame. 5. Finish. Put coriander cubes on top. 6.
