  • Hello Darlings, welcome back to another episode of Dining Through The Decades! In this episode I make Queen Pudding from 1941 from a little Australian Cookbook. This was SO delicious, I highly recommend making it for Christmas or anytime of year for a matter of fact! I hope you enjoy the video and I'll see you all next week for another festive episode of cooking!
    Lots of love,

    Queen Pudding Recipe
    Ingredients:
4 ounces (113g) of bread or cake crumbs
    1 pint (568mL) of milk
    1 tablespoon of sugar
    Rind of 1 lemon
    2 eggs
    A pinch of salt
    2 tablespoons of castor sugar
    Raspberry jam.
    Method:
Bring the milk to the boil, pour it over the sugar and crumbs, add lemon rind and beaten egg yolks; put into buttered pie-dish, and stand it in a baking dish containing about 2 inches of water.
Bake in a moderate oven for about half an hour, or until the centre is quite firm.
Take out, and spread jam over the top, whip the whites of the eggs stiffly, add the castor sugar and mix lightly, spread on pudding, return to a cool oven, and bake till crisp and a pale fawn colour.
