    Thanks for taking the trouble to show to prepare and take the bitterness out of the melon. A ton of videos here don't show that. It's like adding re-hydrated shiitake mushrooms to your recipe and not bothering to show how to re-hydrate them.

    Looks really delicious! We just received some bitter melon from my cousins. I made some soup with the bitter melon earlier for dinner. I'll definitely give this recipe a try.

    Thank you for this recipe. I have been hoping for this! My mom makes it uses ground pork with fish sauce and serves deep fried tofu with a lemon oyster sauce as a side. I really miss eating bitter melon lol. My hubby hates it though. :( This version looks so delicious. I can't wait to try.

    +roaneah i think vegetable in japan. there are some sweet flavored dishes, snacks, and desserts, though.

    Looks like a dish I had in Vietnam. They hollow it out and stuff it with minced pork and boil it in a broth. Lovely!

      I've made something similar. Just be warned, even with parboiling, or soaking in salt, it's called bitter melon for a reason! It's still a very tasty recipe, and you may be a bit shocked at the bitter aftertaste of the first bite. After the first bite, though, it's really good as you know what to expect.

    In the philippines, we use to call it AMPALAYA.. and cook it almost the same as yours.. I dont like it when i was young but now, i'm craving for it..

    This music reminds me of the traditional Japanese festivals, I would really love to see Ochi-San vlog a festival while wearing a Yukata! And combine the vlog with a traditional dish she can make^^ I'm sure a video like this would be a hit!

    thanks for the recipe I ordered Goya seeds online and am currently growing this vine in my backyard. Bitter melon is also eaten in India and Asian countries. This has anti diabetic properties. I wish Americans knew more about Goya. We have a large Asian and Indian population just north of Atlanta.

    I love this! I've had the chance to eat it at an okinawan restaurant and it was really good! Only thing is that I could only get the normal bitter melon from the market which is of a lighter green and less ridges.

      I believe the lighter green (or even beige to off-white) colored bitter melons with smoother ridges are supposed to be less bitter.

    now i'm making goya chanpuru (minus the tofu bit) for my daily morning protein intake... instead of just same ol' egg omelettes
    and i like the goya to be bitter ^^
    too bad i couldn't get hold of katsuobushi...

    what's a good substitute for Katsuobushi? Also, how do I cut or slice the meat if I'm using spam or ham instead? I have already tried your recipe and it turned out great even without the Katsuobushi (because it's not easily available in Philippines)! My grandmother loved it and wants me to make it again soon!

    i agree this is a veg for grown up, i used to hate to have this for lunch/dinner when i was at school, but now i love it. i think the one i had was of a different variety, it's light green and don't have the spikes on skin, but it's got curves around it, and it's much more juicy, so it's tastier ^^

    Most of the goya champuru I have tried uses moyashi もやし (bean sprouts), you may want to try that. I also think Spam tastes the best...

    I heard that goya chanpuru is one of the healthiest veggies ever. One day I tried to cook with goya but I didn´t know the salt trick so it was very bitter ^_^

    Bitter melon often grow in tropical/hot countries,in particularly asia.In my country Thailand we have the bitter gourd which is the same haha.It taste bitter BUT If you cook it well it will relese lesser bitter flavors.

      In north India we call it karela. Or bitter gourd in English. We prepare this vegetable in different ways. My favourites are stir fried with onion and stuffed with masala (a combination of spices) and shallow fried. And we also salt the vegetable and let it sit for 1-2 hours to reduce the bitterness.

      good question. yes this is very basic procedure. people do this when they don't like it too bitter. I think most people do this because you never know how bitter it is until you cook~ but when people want to keep the nutrition, they don't do this and eat bitter.

    I noticed that it takes a long time to cook the Goya (yours seemed quick) but one step I didn't do was after cutting, I didn't salt and wash then cook) -- do you think that was the problem? I like the bitterness and don't need to lessen the bitterness but I would prefer soft Goya before cooking like yours.

    We have dish like this in the philippines. But we dont put salt in the bitter melon we just wash it with water coz they say if you soak it in salt it will remove its nutrients. Plus we add tomatoes to before putting the bitter melon. You hope you could try it out. :)

    Bitter melon, bitter gourd, or karela as we call it, is a common vegetable in India. But most children and quite a few adults don't like the bitter taste. I started eating and enjoying the vegetable in my mid 30s. But I'm not sure whether I'll cook it with pork and tofu or any other protein.

    this vege is called peria (ペリア) in malaysia..my mum always eat it raw or cook like you (minus the pork and bonito flakes)..going to ask her to put bonito flakes later on! (we cant eat pork though)

      They're dry, they last like forever. No need to refrigerate.

    For my opinion, using silk tofu might break into tiny crumbs while stir-frying it, it might not look great after the dish is done. I think it would be better to put the silk tofu into the freezer and wait overnight, then defrost and drain well before cooking. The tofu will change to layers and it tastes great too! (I don't know is there any specific name for this kind of tofu in Japanese but my mother usually do this for the silk tofu and cook with different kinds of food) I hope you can have a try with it~

    I made this today, and my daughter helped me (she’s almost 3). This was VERY good, but I am trying to get use to the bitter melon. I never had anything like it lol it is very bitter.

      That is the kind of bitter melon often sold/eaten by Indian communities around here, too. There's two other kinds that are smoother and lighter in color without the "spikes" that are popular, too.

      MiskiSakura We call bitter melon as "Karela" in our country. yes indian verity is more bitter and tasty than the chinese verity.
