A fine bowl of comfort food! I remember my mom making this style of fluffy drop biscuit style of dumpling, but then I learned that my MIL made them rolled out thin and sliced, almost like a chubby noodle. And I was talking to a friend from Mississippi who said his mom used to slice up flour tortillas into rectangles and used them instead of making the dough- they would plump up in the broth like my MIL's. I am partial to the fluffy ones, but especially when they are blackberry dumplings!
I almost didn't comment but decided I would. I had never had chicken and dumplings... but my southern daughter law kept talking about them. So I tried them once at Cracker Barrel and was not a fan. I love crispy, crunchy, toasted bread... so this seemed mushy to me. I also do not like Asian pork buns for the same reason. If feels like the bread is not cooked. But I must say, yours did look delicious.

The grocery store sells mirepoix. That plus Costco chicken and pre-made chicken broth lets you make chicken and dumpling even if you are sick

It's delicious, but you will notice on Feb 29 that it is not our favorite meal. I definitely think of this as a kid meal.
