Khao Soi by Chef Kasem Saengsawang Farmhouse Kitchen Thai Cuisine

  • Hello everyone. Welcome me here Farmhouse Kitchen. I’m chef Kasem. I am making you guys bone in short ribs Khao Soy Neua tonight. Join me.
    Step 1 : Making beef stew
    Beef short ribs
    Galangal
    Kaffir Lime Leaves
    Pandan leaves
    Salt
    Black pepper
    Step 2 : Curry Paste Mix
    Colander seeds
    Cumin seeds
    Clove
    Fennel seeds
    Bay leaves
    Dried chili
    Fresh garlic
    Fresh chili
    Red onion
    Step 3 : Khao Soy Curry
    Cooking oil
    Red curry paste
    Yellow curry paste
    Coconut milk
    Water
    Plum sugar
    Shrimp paste
    Fish sauce
    salt
    Step 1
    high heat large pot with 1/3 water put galangal, kaffir lime leaves, pandan leaves, s/p bring up to boil then low down to medium heat. Put the short rib and let it simmer for 4 hours
    *** Tip don’t stir too often because you don’t want the blood to get out to the broth too much. It will make the broth turn dark.
    Step 2
    Toast all fresh and dried spices above till aromatic then smash with mortar and pestle until paste.
    Step 3
    Medium heat on medium pan with 3 cups of cooking oil and put curry paste mix from step 2 with red and yellow curry paste together, stir well. Add 3 cups of coconut milk, plum sugar, shrimp paste, salt and keep stir for 10 minutes then transfer to a large pot. Put the less coconut milk, water then seasoning with fish sauce and bring up to boil.
    Step 4
    After 4 hours slow cooked beef short rib, add all beef stew broth to the Khao Soy curry pot. Keep the short rib to slide before serve with egg noodle, bean sprouts, fried shallot, chili oil, green onion, cilantro, boiled egg and fried noodle to finish. Mix and enjoin!

    Wow!! I watched all 41 minutes and 27 seconds of this chef cooking and he put so much love into this dish!! I smiled when he shared the story of when his mom told him that you can tell there was a serious cook in the kitchen by the way they pounded the mortar and pestle. Thanks for sharing the recipe from your ancestors. This is truly an art form and I certainly appreciate the effort you made in making this dish. Much love from Florida!

    Just ate this at their Oakland spot and it was a bit different but it was hands down one of the best things I’ve ever eaten. I came here to learn how to make it but as I would, they protected their gem of a recipe. I’ll gladly go and pay for another bowl!

    I had this dish recently at a different restaurant that was to die for. I have been on a quest ever since to replicate it. While this recipe isn't the same as what I had, it still looks super delicious and I appreciate the hard work that goes into making a meal such as this. Thank you for a great video.

    Wow, ive been looking up a bunch of videos for a khao Soi recipes and they were all so similar to the recipe from bonappetit and none of them felt authentic. Then this pops up on my home screen. Cant wait to incorporate some of this into my recipe next time I make my favorite thai soup!

    Yummy. Booked mark and ready to visit next year hope all is well for the business Basically like kao poon WID a twist but WID diff type noodle😊🤗. I never had it! N that weather outside 💓☔🌧️. Makes it EVN more enjoying.

      Lao Khao soi is made with tomatoes. Fermented bean paste, etc. We all have our own variations and way of making it as per our preferences. Luang Phrabang is the place to eat it since it is originated from there in a way

    That was a lot of beef. How come the water did not top/cover the beef?
    You forgot to include lemongrass in the list posted below your video for boiling with the beef.

      yes, you can. Also chicken will take around 35 to 45 minutes to cook with medium heat. Cheers

    Chef is Khao soi broth necessary to contain beef? My religion forbids the eating of beef. After watching your video I am very apprehensive when eating this Khao Soi in Thailand.

      His accent is strong so it sounds like he's saying the wrong word
      The way he says Lemongrass sounds like lemonglass
      Kaffir lime leaf sounds like kaffer
      Oil sounds like Oy
