I now make lasagna without the pasta. So easy. Put homemade or frozen meatballs in the bottom of a bowl. I recommend a deepish bowl with straight sides. Scoop 2 heaping tablespoons of ricotta cheese over the meatballs. Next layer on your favorite pasta sauce or diced/stewed tomatoes. Finish with a nice helping of grated Italian-blend cheese & microwave on High for 6-8 minutes [depending on wattage]. Pasta-less lasagna.

Easy taco/chili base- 1 tsp each (per pound of meat): Cumin Salt Chili, Onion and Garlic powders Paprika For tacos, add one extra teaspoon of cumin or for chili, add one extra teaspoon of chili powder. And if you get heartburn, I'd leave out the paprika.

Additional low carb veg can also be added along with left over BBQ chicken or mini meat balls (cooked and browned in advance). The latter could replace the tofu for variety.

I like to add leftover tri tip to a bowl of bone broth. Then I add cheese and a half an avocado. It sounds weird but it is soooo good! And very filling!!

After all these years eating low carb I prefer foods that require little cooking. I still cook meal for the hubby. But I really prefer simple whole foods.
Suggestion (from life experience) - if you bread with pork rinds, you do NOT really need extra salt. In my humble opinion, it gets way too salty if you add more salt, especially if using parmesan as your cheese :) Thanks for all the great ideas!!
Can you advise us on whether it's OK to roast nuts (especially walnuts and pecans) before eating them? I learned to do this years ago as it adds a deeper flavor, especially if baking with roasted nuts. But, does it change the nutritional value of the omega fats?
I’d like to gain weight with the possibility of pre diabetes possibly out of it all together and ckd 3a. I have lost too much weight. My doc’s dietitian suggested all foods contrary to my health problems. These are complex carbs including potatoes.
I'm in New Zealand and will try this chicken dish with Dukkah seasoning made from ground walnuts, almonds, sesame seeds, herbs and salt instead of pork rinds. Maybe you have that in the UK?

Love to watch your channel Becky but do not agree with adding anything to your coffee or tea. It will 100% break your fast whether or not you get a rise in blood sugar. Think of it as - could you have milk, MCT or additives if you were about to have surgery? No, absolutely not, because it is a "food" and your body treats it that way. It could also make your fast harder because your body thinks it is food and it is wanting more, thinking you are about to eat. Again, love your calm manner and agree with most of what you say but have to politely disagree with this one point!
When you taste any flour product breads, noodles, without the added flavors of fat, meat, dairy or veg they are not appealing at all. Bland, just a filler.
I also tried it (Raspberry flavor), I found it to be very tasty. Yes, you can tell it is salty, but I love it. Someone else recommended Citrus or orange, which I may try, but I highly enjoy the raspberry.

Taco in a bowl is one of my fav meals. Don't forget to add some avocado or guac for those healthy (and delicious) fats!
You mentioned the cornstarch in the taco seasoning but nothing about the maltodextrin. Can you please do a video on the dangers of maltodextrin.

Try Pork King Good Panko. It’s only pork rinds but by far a favorite for me. They aren’t oily. Then I add the Kraft freshly grated Parmesan cheese.
