I love saltine crackers and once I start eating them I can't stop. So now I don't buy them. I also gave up bread because I couldn't stop eating bread. Since I stopped eating sugar and bread I lost 20lbs so fast and have kept it off for 6 years.
Interesting test.... I tasted sweet almost immediately.... but I also know I often have big fluctuations in my glucose after I eat and feel awful after lunch if I eat anything besides high protein. I also IF many days and don't eat until earliest 2pm. And then I get a huge glucose spike which is not enjoyable so still trying to figure out what is best for me! Thank you for adding this piece of the puzzle.

I am very interested to see the results of this test because I have the horrible habit of not chewing my food well (I had painful bad teeth for many years now I have dentures but still stuggle with not chewing well) so I am excited to see how it is to chew for 30 seconds😂😂😂
My carbs now come from sweet potatoes, lima beans, etc. I have celiac therefore-- no wheat, no seizure but this is also very interesting because the less carb I have, even those on the GF plan the better I feel! Thanks for this information.

Not only is American food striped of nutrients- synthetics nutrients are added with cheap oils & sweetners, chemicals & preservatives. Eating small amouts of the least processed food is best. Simple food.

It seems we are being sold advertising with little regard to the product, save for the canned fish/sardine section. It makes me recall Dr. Marshall McLuhan about media/television especially and his 'The Medium is the Message.' The middle aisles are trying to 'reshape' out eating culture. Sounds conspiracy'ish but apparently it's a robust theory. So I try to buy from a collective farming group.
Nice simple test. As all good moonshiners know. You will add amylase enzyme to the corn (or other non sweet) mash to release the sugars. Thanks tried it myself averaged about 20 seconds.

I would say my carb tolerance was higher when I was younger. Now I am post menopausal and for sure the hormonal changes have lowered my carb tolerance. Maybe this type of subjective test needs to be continually performed and monitored over time.

I think the difference in carb tolerance between you two is not only indicative of your diets but also health changes. Perimenopause and menopause change metabolism, and Keith is now (thankfully) a cancer survivor.

It's great to see the genetic component of carb tolerance adressed. I lived with various roommates for decades, and knew their diets. There is no doubt in my mind that genes play a role in insulin resistance and weight.
What kind of cracker did you use ? Can we get the full ingredients list of the cracker ? I live in Europe, there are many crackers varieties I can pick from, some contain a bit of sugar which I believe can skew the results, some more fat than other etc .. Thank you!
I saw video about 6 months ago from a UK doctor using very low carb, whole foods diets to treat his obese, diabetic, and metabolic syndrome patients. He mentioned the same test that he uses as a general screening tool for carb intolerance and insulin resistance. He doesn't use it as a specific diagnostic method. He uses a plain wheat thins type of cracker, instead of the unsalted saltines.
I'm going to have to try this. But normally, I'm like you - if I just stick to my intermittent fasting routine without specifically worrying about carb restriction per se, I still end up in ketosis at least some of the time.
This is great. I will have to do it again because all 3 times I seemed to go from bland and sweet for a split second and then bland again. So my results are confused.

😢 genetic predisposition. Fasting, working out, dieting, deprivation, and still. Can’t lose weight. It’s mentally exhausting. Years and years of trying. I think some of this is just genetic and nothing we can do.
Maybe this can help. My daughter developed food allergies as a teenager and a doctor put her on a diet that for the first two months, only included vegetables (to detox and heal her gut). Later, other foods, like whole grains, and fruits were slowly added. My husband and I supported her by eating the same diet she did. In two months, I lost 15 pounds. I was surprised, as I was not trying to loose weight. I did not feel hungry and ate a lot......but just vegetables, though I did have sugar cravings for the first week. As a side note, after two months of only vegetables, no sugar, no refined foods, my husband and I attended a wedding reception. We had not eaten dinner, and were hungry. They only had cheese cake and wedding cake. We ate these sweets. The first we'd had for two months and felt like we had consumed poisen. Our bodies could not handle these frankenfoods!
Keto can be healthy but in the end, weight loss is math. The "throw away the scales" people are lying to us. Bottom line, if you're at a calorie surplus you gain weight. It's just that simple.
I tried with a raw potato because we dont have that brand of cracker here in Norway. It either never turned sweet or it was sweet immediately, I did not notice a change in taste
Healthy keto means keto for part of the day, mot all of the day. The target for health is metabolic homeostasis, which requires that metabolism switches between glucose and ketones regularly. It doesn't have to be every day, but metabolic homeostasis requires periods of ketosis and periods of glycolysis.

Sorry 😢, but I don’t understand what is meant by tolerance. If I have low tolerance will my blood glucose go up gently & go back down w/o a spike? If so, then high tolerance would mean there is quick spike in blood glucose. OR, is it the other way around…?

I wonder if you could comment on what symptoms (good and bad) would one expect if they don’t eat enough carbs. We know that too much will turn to sugar and is stored as fat. What If your body needs a certain amount and you don’t consistently provide that….
How does this relate to those with Lipedema? So far, I cannot follow Lipedema-advised eating without adding to fat deposits. Carnivore helps, but I can't get lean when I increase my fat intake.
Well I come from a family of American-Italians which basically means carb central and I fall into the “Full” category but I also have pcos and am always told that to lose weight with pcos I have to eat low carb so idk anymore.
If I eat (at all,) I go to sleep. If I eat carbs, bread, pastas, tortilla shells, breaded foods, etc , I sleep for 8 - 12 hours; & so deep I don't hear movement, talking, or movies near me. I call it the sleep of the dead. Usually my glucose readings are still really high, mid to upper 300s, when I wake up from one of those naps. I've tried exercising after a meal, but it doesn't bring down the numbers very much. Getting frustrated.

Just to clarify. You add up the 3 “times” and then divide by 3 to get your average. And, if you are tracking your blood glucose, note the values after 30’, 60’ and 120’ ?
Q: How would this test be affected by dry mouth and no teeth? I don't salivate properly. I crash after eating even with no carbs I am tired most of the time despite years of whole food and a year of locarb/carnivore. Q: My DNA is 100% European, shouldn't I have a high tolerance for carbs?
But when you eat so low carb for so long, you body can't handle carbs anymore. That's why they tell you not to eat low carb going into having oral glucose tolerance testing done.
My test shows I should be in the very low carb group. But when I do eat like that by the third month I feel very weak and can't maintain proper levels of sodium and potassium, and zero stamina.
That happened to me on keto, too. I was constantly nauseous and so tired. I lost over 100 pounds on keto, but I couldn’t continue forever because I felt like garbage the entire time. And it wasn’t keto flu, because it continued for months and months.
The reason for using an unsalted cracker was not given in the book. However, it was stated repeatedly that it should be unsalted. It could be that the salted variety would make it harder to discern the subtle change from bland to sweet.
From videos long ago, I seem to remember Becky having hardly any response when eating carbs in comparison to Keith. It almost seems like the results are opposite of what they should be however someone did mention menopause/hormones. With me, taking hormone replacement therapy helped my a1c score/glucose response, so who knows, maybe that it playing into things now. Either way, interesting!
BUT…. If you only ate a cracker and a half, your body has sent a message that it is starving, and sent stored glucose into the blood for you to have energy. That is going to increase your glucose. When you skip breakfast, your glucose will go high, your ketones low, and you will have difficulty getting it back for the whole day. This is something I learned recently, and I have seen it ring true more than once since I learned it. 🤷🏼♀️
@@123onetwothification Fasting is an entirely different creature. I have tried fasting as well. And the morning turned out to be the worst time for me. You are not actually skipping breakfast though, your body has adapted to a schedule that is healthy for you. I won’t claim to understand the entire ins and outs of it but generally, as a rule, skipping breakfast is a bad idea for glucose and ketones. I know of the dawn effect. I get that also. But in the two days that I skipped breakfast, (or ate minimally) my GKI rose to over 12.5 (GKI equals glucose divide by 18 divide by Blood ketone). Since I’m aiming for between 1 and 3, that’s a devastating number. No ketosis at all. And yet all day, on low to no carbs, does not rectify this problem. Overnight, it rectifies itself and goes right back to the prior pattern. Both times it did this. I usually fast 4pm to 9am. Seems to work best for me. Nice chatting
I have been zero carb for 13 months. I weigh 130 pounds, less than when I graduated from high school! I feel better at 63 than I did in my thirties. I have a gluten allergy. Why would I eat a cracker? I am not intrigued. I feel best on a zero carb diet. Carbs make me crave dairy, eggs, and sugar. I have an allergy to the first two and the third is more addictive than cocaine. Honestly, 25% of calories from carbs is way too much even for “restricted” consumption. I did keto on and off for years and my weight would yo-yo up and down constantly. I am not going to fix what is not broken.
Don't eat high glycemic carbs like crackers only kale, arugula, etc. For two YEARS I ate a minimum of 8,000 calories a day and didn't gain weight. I would eat 11 sandwiches a day. Now at age 75 I still weigh what I did back in 1967 (140 lbs/29" waist). Don't think I have a problem with carbs.
Sorry but I think that test is goofy. Dr Aikens has a test in his book that I believe would be more accurate. You follow his diet for 2 weeks and then measure how much weight you have to lose and how long it took you to lose weight in the two weeks. Then you can see how sensitive you are to carbs and how much to consume in a day. Dr. Aikens was the OG of the keto diet and did not get the appropriate credit that was due to him. 🎉
I recall doing this test in elementary school. I’m not sure why they were testing us! Also glad to see Dr Keith.

I know that is I eat a high carb meal I can barely stay awake. I am beginning the carnivore diet and feel better than I have since I was a teenager.
Just be careful because the saturated fat can make you more insulin resistant. Look up intramyocellular lipids.

Good morning, I just don't eat carbs anyway, only carbs I eat is 10-15 pieces of Berries with Kefir, I do Healthy Keto and OMAD.
I do a lower carb WW plan. Mainly bc I know I’m insulin resistant and when I do eat carbs, my heart races.

Did with my husband. Prior to test knowing I'm definitely IR and he is not. We both never detected the sweetness. I dunno.

You might be sensitive to the baking soda in them. I have the same reaction to anything with a lot of baking soda. Tastes awful.
I wonder if you could comment on what symptoms (good and bad) would one expect if they don’t eat enough carbs. We know that too much will turn to sugar and is stored as fat. What If your body needs a certain amount and you don’t consistently provide that….
How does this relate to those with Lipedema? So far, I cannot follow Lipedema-advised eating without adding to fat deposits. Carnivore helps, but I can't get lean when I increase my fat intake.
Well I come from a family of American-Italians which basically means carb central and I fall into the “Full” category but I also have pcos and am always told that to lose weight with pcos I have to eat low carb so idk anymore.

If I eat (at all,) I go to sleep. If I eat carbs, bread, pastas, tortilla shells, breaded foods, etc , I sleep for 8 - 12 hours; & so deep I don't hear movement, talking, or movies near me. I call it the sleep of the dead. Usually my glucose readings are still really high, mid to upper 300s, when I wake up from one of those naps. I've tried exercising after a meal, but it doesn't bring down the numbers very much. Getting frustrated.

Q: How would this test be affected by dry mouth and no teeth? I don't salivate properly. I crash after eating even with no carbs I am tired most of the time despite years of whole food and a year of locarb/carnivore. Q: My DNA is 100% European, shouldn't I have a high tolerance for carbs?

But when you eat so low carb for so long, you body can't handle carbs anymore. That's why they tell you not to eat low carb going into having oral glucose tolerance testing done.

My test shows I should be in the very low carb group. But when I do eat like that by the third month I feel very weak and can't maintain proper levels of sodium and potassium, and zero stamina.

That happened to me on keto, too. I was constantly nauseous and so tired. I lost over 100 pounds on keto, but I couldn’t continue forever because I felt like garbage the entire time. And it wasn’t keto flu, because it continued for months and months.

Is it imperative it be 'unsalted'? I have saltines, but they are salted.
The reason for using an unsalted cracker was not given in the book. However, it was stated repeatedly that it should be unsalted. It could be that the salted variety would make it harder to discern the subtle change from bland to sweet.

Remember a carb is 4 calories. So if you can have 2000 calories a day, 25% would be 500 calories from carbs, divided by 4 is 125 carbs or less per day

From videos long ago, I seem to remember Becky having hardly any response when eating carbs in comparison to Keith. It almost seems like the results are opposite of what they should be however someone did mention menopause/hormones. With me, taking hormone replacement therapy helped my a1c score/glucose response, so who knows, maybe that it playing into things now. Either way, interesting!
I have noticed that I feel crappy and bloated after eating a substantial amount of carbs.
I would choose Organic at least without all the chems..
It turns out Amazon DOES offer unsalted saltine crackers, but..... salt is still listed in the ingredients.
They aren't really unsalted, just unsalted tops.

BUT…. If you only ate a cracker and a half, your body has sent a message that it is starving, and sent stored glucose into the blood for you to have energy. That is going to increase your glucose. When you skip breakfast, your glucose will go high, your ketones low, and you will have difficulty getting it back for the whole day. This is something I learned recently, and I have seen it ring true more than once since I learned it. 🤷🏼♀️
I fast until 12:00 noon. My blood sugar does not elevate. However, I always have a bit of the "dawn" effect in the morning.
@@123onetwothification Fasting is an entirely different creature. I have tried fasting as well. And the morning turned out to be the worst time for me. You are not actually skipping breakfast though, your body has adapted to a schedule that is healthy for you. I won’t claim to understand the entire ins and outs of it but generally, as a rule, skipping breakfast is a bad idea for glucose and ketones. I know of the dawn effect. I get that also. But in the two days that I skipped breakfast, (or ate minimally) my GKI rose to over 12.5 (GKI equals glucose divide by 18 divide by Blood ketone). Since I’m aiming for between 1 and 3, that’s a devastating number. No ketosis at all. And yet all day, on low to no carbs, does not rectify this problem. Overnight, it rectifies itself and goes right back to the prior pattern. Both times it did this. I usually fast 4pm to 9am. Seems to work best for me. Nice chatting

Why no salt?
I would guess that the presence of salt would make it harder to detect the moment that sweet appears. You don’t want flavor profiles competing.

McDonald's adds salt to there milkshakes to kill the sweet taste why? So they can add more sugar got to get the children addicted early
I have been zero carb for 13 months. I weigh 130 pounds, less than when I graduated from high school! I feel better at 63 than I did in my thirties. I have a gluten allergy. Why would I eat a cracker? I am not intrigued. I feel best on a zero carb diet. Carbs make me crave dairy, eggs, and sugar. I have an allergy to the first two and the third is more addictive than cocaine. Honestly, 25% of calories from carbs is way too much even for “restricted” consumption. I did keto on and off for years and my weight would yo-yo up and down constantly. I am not going to fix what is not broken.
Do you not eat vegetables or fruit? Those are carbs too. You need carbs for your brain to function.

Don't eat high glycemic carbs like crackers only kale, arugula, etc. For two YEARS I ate a minimum of 8,000 calories a day and didn't gain weight. I would eat 11 sandwiches a day. Now at age 75 I still weigh what I did back in 1967 (140 lbs/29" waist). Don't think I have a problem with carbs.

Sorry but I think that test is goofy. Dr Aikens has a test in his book that I believe would be more accurate. You follow his diet for 2 weeks and then measure how much weight you have to lose and how long it took you to lose weight in the two weeks. Then you can see how sensitive you are to carbs and how much to consume in a day. Dr. Aikens was the OG of the keto diet and did not get the appropriate credit that was due to him. 🎉
Does anyone else notice that crackers ‘heat’ up in your mouth after a few seconds or is it just me?
