Tomato eggs - How to cook (Easy Chinese recipe)

- Tomato eggs (蕃茄炒蛋/ 西红柿炒蛋) is home-cooked comfort food popular in Chinese families. It is a quick and easy dish that you can get onto the dining table in 15 minutes.
I have been cooking for many years both for work and at home. It is not always necessary to use multiple ingredients and involve complicated techniques to prepare a fantastic dish. Tomato and egg stir fry is one of these typical examples.
To do this, you need to look for a winning combination of ingredients. Egg and tomatoes are the perfect matches, which are high in umami. Therefore, it only needs a few basic seasonings to bring out its flavor.

For the tomatoes (A)
2 tomatoes (8 oz or 250g)
1/4 tsp of salt
1 tbsp of ketchup
2 tsp of sugar
2 tbsp scallion (white sections, thin rings)
2 tbsp water
For the eggs (B)
4 eggs
1/4 tsp of salt
1/4 tsp of ground white pepper
Others (C)
1 tsp of cornstarch mix with 2 tbsp of water (cornstarch slurry)
2 tbsp of scallion (green section, thin rings)
2 tbsp of cooking oil
Method
- Cut the scallion into thin rings and separate the green and white sections.
- Cut the tomatoes into small dices.
- Saute the white section scallion in oil. Then add the remaining ingredients in A, Cook for 2 minutes. Add the cornstarch slurry. Remove.
- Mix the ingredient in B. Pour into a pan with some oil over medium heat. Stir until it becomes half-cooked scrambled eggs.
- Return the tomatoes to the pan. Add some green scallion, Have a quick mix and dish out.
- Garnish with more green scallion.

This is a different way of cooking tomatoes and eggs from what I already do. I never thought of the cornstarch, for example, nor the sugar. I am going to try it as soon as I write this-because I am hungry! I also like how you did the video. I love the simplicity of ingredients - we grow our own vegetables, and get our eggs from a friends who keeps chickens, turkeys & guinea fowl - we enjoy eggs from all three, especially the guineas, so I’m always on the lookout for simple egg dishes. Both my husband and I prefer the more savoury, custard-like egg dishes (with rice of course 😉) for breakfast, with him being especially fond of the Gyeranjjim I learned to make as a small child. 🥰🤤

Good recipe...thanks. I'm Jamaican so I'm not in favour of putting sugar in the dish. So I'll change that the next time I prepare this dish. I didn't follow your advice of adding sugar to taste. It's better than the sum of its parts. In other words, it has just a few simple ingredients but really tastes 👌great. A great beginners dish that every single person should master along with cooking rice. And it's inexpensive to make . I cook it with second class cooking tomatoes 🍅. But you can use any kind even canned if you wish.

Thx for your recipe, i don't really like a dish that too sour or sweet so i add a lil bit of soy sauce and it turn out great
I do it backwards for one less bowl to clean. Half cook the eggs and put back in bowl I scrambled in. Tomatoes and scallions come straight from the cutting board to the pan. Wok in my case. When sauce is done I turn off the heat and in go the eggs. I stir and let sit for a minute. That's my way, anyway. I hope more people try this dish it's great.
