Dear Chef John, I'm really happy you shared this recipe with us as Indiana will be celebrating our 200th year since becoming a state. Yes, it is our bison-tennial.
And you are the Mark Ruffalo of your buffalo.
Chef John puts cayenne in everything because it's the secret to immortality he's actually 6000 year old Babylonion priest
@Chas No r/woooosh
@Chas No I'm pretty sure George A is right on this one. If cayenne doesn't cause immortality then how could our beloved Babylonian priest Chef John live to 6000?
@@Skyshroud3 The answer is obviously fresh grounded black pepper.
That is one beautiful bacon baby bundle of joy. He should be delivered to my house right away. Please and thank you.
I thought it was kinda kina scary looking.
Cooking Bacon in Butter - Cooking Bacon in Butter ...Chef this is Wonderful! :)
***** ever think its new to him? or maybe its not new to him and he was just cheer leading. common sense its nothing new.
I got slightly nauseous when he put in both bacon and butter, lol. Bacon is tasty and all, but I do not think I would be able to eat that cooked in butter, especially not when such a large pinch of salt is thrown in the meatloaf mix.
But I guess cooking is all about personal taste. ¯\_(ツ)_/¯ I pretty much always prefer olive oil over butter with pan-frying, it's healthier, has more taste, and smells incredible.
***** I guess that somewhat compensates.
Eric yup
Chef John will always be the OG cook of UA-cam in my heart
"you are the meatloaf of your meatloaf"
LOL. Definitely my favourite "you are the ____ of your ____" ever !!!
who's watching this in the middle of the night and struggling to fight the urge to eat your whole fridge?
Me ✌🙈🙉🙊
Me, except it's 7:50 am. lol
Mee😂

"All about that baste?!!" NICE!!
I seriously put cayenne in everything since I subbed to this channel about a month ago. I've been surprised how much it enhances the flavor of just about everything. This channel has upped my food game DRASTICALLY.
Perfect example of why I love your channel. It has all the best elements of a Food Wishes show:
1) Wonderfully inappropriate song lyrics turned into a "dad joke"
2) The trademark "you are the...of your..." but this one got pretty "meta"
3) The beautiful hypocrisy of using a really lean meat, but then adding multiple fat replacements.
4) Anticipation of explaining to my girlfriend why we MUST start with both bacon & butter, then once she forgives me and walks away, I wrap the whole damn thing in more bacon.
Keep doing what you do. We love it. Oh, and your jerky recipe made me an office hero, so good lookin out on that too.
Chef John, your rhyme schemes are always on point.
I tried this and it turned out great. I used lean ground beef and beef bacon. The meatloaf was tender inside and the beef bacon took the meatloaf to a new level. I also added a home style BBQ sauce about 15 minutes before it was done. This will be my new meatloaf recipe. Thx. Oh! The mushroom sauce was great as well!!!!. 👍🏽👍🏽👍🏽
Made this and came out really well on the first try by following John's instructions. Just to add a few notes don't have a food processor chopping it up by hand like I did will take awhile and for the glaze be careful with rice vinegar as 2 Tbsp is quite overpowering. Couple drops was enough for me but adjust to how you like it.
I was considering giving this a three out of three, but I decided on two. It'll be OK Chef John, because two out of three ain't bad.
this is bacon .....I found this humorous. Definitely a Meatloaf joke :) BTW you are showing your age knowing that song :P:P:P
Delekham I'm not too old, but I do love me both kinds of loaf.
Joseph Kudirka I listened to it on a 8-Track Cassette.
Delekham lol what song?
Blimpdawg A song from 1976/1977 "Meatloaf" Bat out of Hell Album. The name of the song??? Two outta three ain't bad.
Did anyone else think he meant buffalo, as in like hot wing sauce flavored meat loaf? ;P
I certainly didn't. I thought of those magnificent beasts with lean meat.
It did until I saw the picture lol
YES I WAS LIKE HMMM INTERESTING
What do you think this is, 30 Minute Meals with Rachel Ray?
Aren't Buffalo from Africa? Where did he get this meat?
"You are the Meatloaf of your meatloaf."
Love it :)
I have been watching your videos for a couple of years now, and love your style of delivery. It makes watching fun besides being informative. The tenor and lilt of your voice gives the impression of someone having fun while cooking. Thanks Mr. Wishes, I will continue to watch !
Damn you chef John, now I'm not only hungry but I'm also with that song stuck in my head.
I really appreciate your recipes, they are all very user-friendly. And you (your cookware) is a joy to watch.
I'm a new subscriber, but I'm already going through all your old videos! Love it keep up the good work :)
I don't usually say "lol" and mean it, but I truly lol'ed when you sang "All about that baste, 'bout that baste... it's no trouble."
Beautiful John! Looks Great!
Food Wishes x BBQ Pit Boys: the ultimate food collaboration
Colossal winner for me at dinner last night and I am not a very good cook!! I went another step and did a bacon weave. 🥓 Thanks!! Pro tip: thinly sliced cold meatloaf makes a great sandwich for lunch the next day.
That glaze is a must! Yummy!
love your videos chef john! I'd love to see more healthy recipes too, I know you've done plenty of them in the past but I'm always looking for more ideas!
1st time commenting...Fantastic recipe! Really like the channel, Informative, as well as entertaining. Nice balance of the two... Recipe's are easy and you explain them in laymans terms with the reasoning explained as well. Congrats on a fine UA-cam channel... I subbed.
Wow that looked stunning 👍
Looks so delicious
Now that is a beauty John, I will be trying this one!!
this looks amazing!!
Hi John. I´ve learned so much from you and your vids. Just wanna say THANKS.
Looks great. Thanks.
Very nice recipe
You are such a delight!
Looks Yummy! Thank you!
Don't toy with my heart Chef John.
Wow, congratulations! 1,000,000 subscribers! Cheers!
Looks yum, wish I could get buffalo to try.
Fantastic! I'm making this for my daughter tonight for dinner!
I've never enjoyed eating meatloaf, but that looks amazing.
I am starving and I watch this while my entire body dies slowly.

Gosh this looks truly glorious! Can't wait to give this a go over the weekend! ^^
Best meatloaf i've ever had! Thanks so much for this recipe, it basically was the first time i cooked meatloaf and made gravy and it was just amazing. I used regular beef though, it's hard to find buffalo around here, very delicious nonetheless!
ALL ABOUT THAT BASTE, BOUT THAT BASTE, NO TROUBLE~
You are the meatloaf of your meatloaf - chef john
I like your style. Can't wait to let it cool before tasting. I do that too. Luv your foodie vids.
Love it
That looks so good. You should try it with some lingonberry jam too, that's the classic way to go (here in Sweden).
Had to full-screen this. Great job Chef John =]
Im all about that baste, that baste..
That's gold!
LOL It's all about the bass, bout the bass, no trouble XD Nice one Chef John
Very good 👍👍👍
You are the best
it look so ... délicieux =O
Omgosh you crack me up!!!😂😂
I am going to try mine meat loaf with Bacon wrap today!
Looks good! :D
I must admit at the begining of the video I was like "I'm not using Buffalo". But by the end I was convinced. Thank you for another great recipe.
That's heaven
I've got a loaf pan, and a tip. Okay 2 tips. Use the pan to shape your loaf, with the bacon on the bottom and up the sides. Chill and turn out into your baking dish. For the vegetables use a can of Veg All, drained but not rinsed. Not a tip: regular wonder if it's bread works fine.
LOL, I've made meatloaf with leftovers. Even Mac & Cheese. Gumbo. Jambalaya. Green beans. Frito bean dip, with Fritos.
Chef John in the bbq world that is called a fatty. We stuff with various items like cheese and other goodies. Yours looks great too. Keep up the good work
That looks AMAZING! I'm going to have to try it.
P. S. Thanks for the warning on live buffaloes lol I'll make sure to stick with grounded up buffalo.
YES!!!! Please do more "exotic" meats....
This looks great! I noticed that you used rosemary to season early on, but urge you to use sage next time instead. Sage creates a mystery ingredient experience, that is very refreshing with each bite.
Chef John kills me ... love the corny jokes ... my go to for recipes
CHEF JOHN IS ONE OF THOSE PEOPLE THATS COOLER THAN ALL THE OTHER PEOPLE TRYING SO HARD TO BE COOL WITHOUT EVEN TRYING.....
Awsome I love your page
way to go Chef ! love Buffalo meat. My butcher makes Buffalo burgers (minced with bacon). So delicious...! Thank you for sharing this ! :)
"I'm gonna use my bare hands as it's the best tool for this." I don't have access to your bare hands. Can I substitute somebody else's?
Last night I combined some of this recipe with the prison meatloaf recipe. It turned out so beautiful and of course tasty. Thank you chef!!
Hello everyone! I actually make this but with some easier tips... I do use a chopped paprika and also some leak, which I put in the micro wave oven just for a few seconds and then I fill my meatloaf with chunks of cheese and some pimento olives... and always cover with bacon... usually I also make the potatoes and what ever I have in the same oven pan - and I promise it always turns out nice and everything is ready to eat! Gravy you make whatever is left of the juices... Anne from Sweden
You're right about gaminess being undetectable. Buffalo is so good!
your 2nd music reference was on point sir
That is one sexy frying Pan.
Gunna go for this one.
You have beautiful hands, Chef John.
"...scrape down your sides,
...about the same size."
"...nothing to fear,
as I showed you here."
You're speaking my language brother!
at my house weve ALWAYS wrapped out meatloaf in bacon. yes. phrasing.
In my house every thing is wrapped in bacon. There are some downsides, because my toilet seat is wrapped in bacon which has caused a lot of pimples... Might be getting a little to personal.
George A.
its the lack of bacon thats cause them pimples, lard exfoliates, moisturizes, disinfects, you need to start lining your bed sheets, chairs, couches, etc with bacon as well. one warning though, this may cause immortality
John, please do a tutorial video on how to make a Cobb salad! (Please with bacon, bacon is the best)
this is glorious
So making this for Easter.
"You are the Meatloaf of your meatloaf!" You've been waiting to say that, haven't you? :)
Yum
I have a question. How do you clean those skillets? Do u stick them in the dishwasher or do u scrub them by hand. I've been wanting to purchase some high quality stainless steel skillets but I have no idea how to clean them. Thanks!
Buffalo is delicous!!!
As an Australian, would this work with Kangaroo? From what you've said buffalo has similar problems to roo; finely ground, super lean, and a little bit gamey (or a lot in the case of the roo).
lol thanks chef for the Buffalo safety tips!
Can I use grass feed beef instead? Bison is not available where I live (it's my favourite protein next to elk and duck)
Can you make an elk/ deer recipe? Thanks
lol I wish I could make cooking videos in my sweatpants too haha. The food looks delicious though
Meatloaf is good
WOW the best meat loaf ever the crisp bacon at the end is tempting to eat it all before anyone sees it,\Toddy
GOD this looks amazing. Gotta find a place that sells ground buffalo now, lol.
I do love bison meat but its pretty expensive where I live. Would the loaf be too fatty if I used the exact same recipe but substituted beef?
What type of knives do you use? I have been looking for some good knives, but all I have seen are mixed reviews. Help!!
This brought back memories of a "fancy" meatloaf my mother used to make. For some reason we called it Spinach Burgers but I don't know why. It was rolled with a layer of spinach and, I want to say, maybe ham? And there was definitely some cheese involved. I wish I had the recipe now, but we lost it.
Can it be my food wish to have Chef John resurrect an obscure, rolled meatloaf recipe from my childhood?
Hi chef John could you try to make sizzling rice soup. I can't find a single video for it.
Bacon and all about that bass!!.. oh my! Is this heaven or wt?!.. lol
almost looks like the "roast pork" nanchatte from the anime, "Shokugeki no Soma".
Im all about that base no trouble hahah
