      I got slightly nauseous when he put in both bacon and butter, lol. Bacon is tasty and all, but I do not think I would be able to eat that cooked in butter, especially not when such a large pinch of salt is thrown in the meatloaf mix.
      But I guess cooking is all about personal taste. ¯\_(ツ)_/¯ I pretty much always prefer olive oil over butter with pan-frying, it's healthier, has more taste, and smells incredible.

    I seriously put cayenne in everything since I subbed to this channel about a month ago. I've been surprised how much it enhances the flavor of just about everything. This channel has upped my food game DRASTICALLY.

    Perfect example of why I love your channel. It has all the best elements of a Food Wishes show:
    1) Wonderfully inappropriate song lyrics turned into a "dad joke"
    2) The trademark "you are the...of your..." but this one got pretty "meta"
    3) The beautiful hypocrisy of using a really lean meat, but then adding multiple fat replacements.
    4) Anticipation of explaining to my girlfriend why we MUST start with both bacon & butter, then once she forgives me and walks away, I wrap the whole damn thing in more bacon.
    Keep doing what you do. We love it. Oh, and your jerky recipe made me an office hero, so good lookin out on that too.

    I tried this and it turned out great. I used lean ground beef and beef bacon. The meatloaf was tender inside and the beef bacon took the meatloaf to a new level. I also added a home style BBQ sauce about 15 minutes before it was done. This will be my new meatloaf recipe. Thx. Oh! The mushroom sauce was great as well!!!!. 👍🏽👍🏽👍🏽

    Made this and came out really well on the first try by following John's instructions. Just to add a few notes don't have a food processor chopping it up by hand like I did will take awhile and for the glaze be careful with rice vinegar as 2 Tbsp is quite overpowering. Couple drops was enough for me but adjust to how you like it.

    Best meatloaf i've ever had! Thanks so much for this recipe, it basically was the first time i cooked meatloaf and made gravy and it was just amazing. I used regular beef though, it's hard to find buffalo around here, very delicious nonetheless!

    I've got a loaf pan, and a tip. Okay 2 tips. Use the pan to shape your loaf, with the bacon on the bottom and up the sides. Chill and turn out into your baking dish. For the vegetables use a can of Veg All, drained but not rinsed. Not a tip: regular wonder if it's bread works fine.
    LOL, I've made meatloaf with leftovers. Even Mac & Cheese. Gumbo. Jambalaya. Green beans. Frito bean dip, with Fritos.

    This looks great! I noticed that you used rosemary to season early on, but urge you to use sage next time instead. Sage creates a mystery ingredient experience, that is very refreshing with each bite.

    Hello everyone! I actually make this but with some easier tips... I do use a chopped paprika and also some leak, which I put in the micro wave oven just for a few seconds and then I fill my meatloaf with chunks of cheese and some pimento olives... and always cover with bacon... usually I also make the potatoes and what ever I have in the same oven pan - and I promise it always turns out nice and everything is ready to eat! Gravy you make whatever is left of the juices... Anne from Sweden

      In my house every thing is wrapped in bacon. There are some downsides, because my toilet seat is wrapped in bacon which has caused a lot of pimples... Might be getting a little to personal.

      its the lack of bacon thats cause them pimples, lard exfoliates, moisturizes, disinfects, you need to start lining your bed sheets, chairs, couches, etc with bacon as well. one warning though, this may cause immortality

    As an Australian, would this work with Kangaroo? From what you've said buffalo has similar problems to roo; finely ground, super lean, and a little bit gamey (or a lot in the case of the roo).

    This brought back memories of a "fancy" meatloaf my mother used to make. For some reason we called it Spinach Burgers but I don't know why. It was rolled with a layer of spinach and, I want to say, maybe ham? And there was definitely some cheese involved. I wish I had the recipe now, but we lost it.
    Can it be my food wish to have Chef John resurrect an obscure, rolled meatloaf recipe from my childhood?
