Lemony Garlic chicken/ Rice/ Yoghurt (Fattet D’jaj)

2 large rounds Arabic bread, split and cut thin or small squares
Shallow fry in oil ( peanut oil, olive oil)
Fry till light brown and place on absorbent paper and cool completely.
Freeze any extra croutons.
1 whole chicken (2lb)
2 tablespoons clarified butter
1 tablespoon olive oil
2 carrots cut coarsely
2 celery stalks cut coarsely
20 cloves garlic
3 bay leaves
2 cinnamon sticks
Juice of 4 lemons ( 1cup )
1 cup water
Salt & Pepper
Yoghurt Sauce
1 clove garlic mashed to a paste
1 teaspoon salt
2 to 3 cups plain full fat yoghurt
Zest and juice of 1/2 lemon
2 tablespoons Tahini (sesame butter)
Turmeric Rice
2 cups short grain rice (calrose) pre soaked, drained
2 tablespoons clarified butter
1/2 teaspoon Turmeric
1 teaspoon salt
4 cups water
Garnish
*1/2 cup pine nuts or slivered almonds fried lightly in 2 tablespoons clarified butter
*1/4 cup toasted pistachio nuts
*Thin lemon zest slivers or zest of lemon.
The chicken will braise for at least 1 hour until it falls of the bone.
