Homemade Italian Subs Bread, Italian Sandwich Bread, Subway Sandwich Bread, Italian Biga Method

  • The Italian submarine subs (sandwich) has a long history, and Subway sandwiches are all derived from it. The bread for making Italian subs is a long strip submarine shape bread, with a distinctive soft and chewy texture. The Italian bread introduced here has thin and crisp crust, moist and soft inside. It can be eaten directly with olive oil and balsamic vinegar as a pre-dinner bread, or it can be made into an Italian submarine sandwich, which can be a good choice for holiday, picnic, or for a decent lunch!
    Recipe for 2 bread
    Bread Ingredients
    ✤Italian Biga
    Bread Flour 160 g
    Instant Yeast 1/4 tsp
    Water (20-25℃) 105 g
    ✤Final Dough
    Bread Flour 160 g
    Caster Sugar 8 g
    Instant Yeast 1/2 tsp
    Salt 6 g
    Cold Water 105 g
    Olive Oil 18 g
    Italian Biga All
    ✤Preheat the oven to 400F/200°C 30 minutes in advance, spray a little hot water immediately after placing the baking pan in the middle lower rack, wait 30 seconds and then spray water again, and bake for about 20 minutes until the surface is golden brown. When bake for about half of the time, you can rotate the baking pan back and forth to make the surface of the bread more evenly coloured.
    💕Tips
    *The water temperature should be adjusted according to the room temperature. After the main dough is finished, the temperature should be about 24-27°C.
    *The crust of the bread will become soft when the bread cools. If you prefer a crispy crust, you can bake it in an oven preheated to 375-400°F for about 5 minutes before eating.

      谢谢支持😄,这款面包和法棍有些相似,但意大利面包面团中加了油,皮要薄要酥脆一些,就算冷面包吃起来也不费劲,非常适合做三明治。另外用了老面,更保湿和抗老化。

    If you spray the bread with water before slicing it with the razor blade, you will get cleaner cuts without the dough trying to stick to the blade. I haven’t bought bread from the store in almost ten years because I make it all at home now. Your shaping technique is impressive! You clearly have a lot of experience. I’m going to share your video with people who ask me about how I shape my bread because your technique is similar to mine. Excellent video!!!

      👍液体油要比黄油难揉进面团。
      把油倒入盆里和面团一起,采用抓挤捏的方法会比较快让面团把油吸收掉。

    老师,我这里的室温一般在32-34c,请问老面从冰箱里拿出后可以直接使用吗?还是要回温至18c 呢?

      做这款面包老面需要回温。
      你可以把主面团里面的水使用冰水来降温。面团搅打过程中可以冰敷来降温。

      检查一下,面团做造型前,是否松弛够了,没有松弛好的面团在烘烤时会开裂。
      另外,面团也不要卷太紧。还有收口要收紧,收口朝下,放入烤盘。
