Today I am preparing a mix of four different grains: basmati rice, wild rice, quinoa and farro.
Typically grains are cooked on the stovetop but I have discovered a way to cook them in the oven! Yes, baked grains!!
The results are light and fluffy, never sticky, perfectly cooked grains.
Easy breezy, delish and nutrish!!!

BREAKFAST
1 Protein
1 Grain
1 Fruit
LUNCH
1 Protein
1 Vegetable
1 Fat
DINNER
1 Protein

PROTEIN
4 oz. meat/poultry/fish
2 eggs
2 oz. hard cheese
4 oz. cottage cheese (plain)
8 oz. yogurt (plain, no added sugar)
2 oz. nuts/seeds/nut butters (no sugar)
6 oz. beans (legumes)
4 oz. hummus
2 veggie burgers
4 oz. plain tofu
4 oz. tempeh
GRAIN
4 oz. cooked rice, potato, quinoa (or any cooked whole grain)
4 oz. corn or peas or winter squashes
2 oz. oatmeal or oat bran (weighed dry, before preparing with water)
3 rice cakes
FRUIT
1 piece of fruit (apple, orange, banana, peach, etc.)
6 oz. loose or diced fruit (berries, grapes, cantaloupe, watermelon, fruit salad, etc.)
2 oz. dried fruit (raisins, dates, apricots, etc.)
VEGETABLES
16 oz. cooked or raw or a combination of both
including summers squashes
including avocado and olives, used sparingly
FAT
1 Tablespoon oil (olive oil, canola oil, safflower oil, vegetable oil, coconut oil, etc.) (any oil)
1 Tablespoon butter or margarine (no sugar in ingredients)
CONDIMENTS (with meals)
free to use mustard, vinegar, spices, lemon/lime, cinnamon, pam spray, herbs, soy sauce, fat free broth or stock (unless you find yourself abusing any of these foods)
AVOID
flour
alcohol
sugar, artificial sweeteners, all sweeteners

Truly practical, easy, and cost effective way of cooking grains. No waste since rice soesnt stick.
Once you showed us a few months back, that is how I prepare ours.
I love consuming each grain and not having to let the pot sit soaking to get the stuck on rice off.
Letting it sit in the residual heat is KEY... grains love that, especially the quinoa.

aaaamazing!!!! thanks lulu for sharing how you make your grains in the oven from the beginning to the end. eggs with rice was one of our friday night dinners during lent back in the day growing up. and our morning meal before we backpacked. it's hearty and delish!!! it is also great with shrimp, mushrooms, any kind of onion actually whatever protein and veggies that you like... continued blessings.🕊

Thank you, Lulu for sharing so much with us. I'm learning a better way to cook and eat with my limited mobility in the golden years. Pre-cooking allows a much easier evening meal with more of an "assemblage" rather than the standing and cooking after a full day. Love the way you mix the grains!! ❤

Have been making mixed grains Lulus's way for a while now. She is correct - it bakes perfectly every time. Would not use any other method after trying this. Thanks Lulu for introducing me to one of my favorite things to make and enjoy.

yes, I cook in Instant Pot when I'm traveling!! at home, I prefer the oven bake! 😊

I guess I never knew I should rinse my rice! 😮
it rinses some of the starch and I think some toxins (quinoa). I rinse it when I'm home but it's not practical to rinse it when I'm living in my campervan!

Baking might just be why it works for grains that normally have different cooking times. But wait dont you do them in the instapot when youre on the road?
yes, I use the Instant Pot when I'm on the road, but love using the toaster oven when I'm home!! 😊
How do you cook them in your van when you don’t have free running water or your toaster oven?
I cook them either in the Instant Pot or just in a covered fry pan. but at home, I love to bake them!!

If boiling, do you know how long it should take?
I'm not really sure. just until all the liquid is absorbed!!

Do you ever use Chia seeds for protein to add to other ingredients? Did you know that Olympians use Chia seeds?
I've had chia seeds and I like them, but I never really chose them. they would be counted as a protien.
