I spent two weeks during a Christmas season at a fancy resort in Negril. They served lots of really good European style cuisine. It was good, but the best food I had was at the airport on my way home. Two of those locally made Jamaican beef patties almost had me staying for another couple of days, just for more of those patties. I'll never forget them. I'm going to try to make these your way. Thank you Morris.

You wouldn't need to add breadcrumb or the "coloring" if you put aside the filling, cook the meat so it turns golden brown. This does three things. It adds further deep beef flavor due to caramelization ,providing that darkening you want, as well as allow the sugars in the ketchup to thicken further and allow the mixture to bind together better. NO BLENDING NEEDED. The meat will have a lot of liquid, so you need to render that out. You'll know when it's getting golden when it sounds like its popping. Release it from the bottom of the pan and mix it up and repeat until all sides of the meat is golden. Then add back the veggie filling and cook down the sauce with that. It'll attach better to the meat like that.

Also if you make the filling first, you can use the drained fat instead of the vegetable shortening for the crust, this helps with that classic orange color of the crust and gets it super flaky, plus no need for extra ingredients or extra waste, and you can use more flavorful higher fat content beef.

The blending is for the *texture* my guy. Patties traditionally - when done correctly- NEVER have a crumbly filling like say a pastie. Sacrilege! so buzzing even some of the mixture so that it has a paste consistency is accurate.

Ive noticed, if you ground the onion, carrot, and chive mixture with a mortal and pestal, it brings better flavor, but also, caters to the people that arent fans of larger onion pieces and texture. For some people biting into a chunk of onion is a bit too much, so I like to more evenly distribute the flavor across the ground beef. It caters to both types of people.

My brother: try separating the liquid fats from the beef (before incorporation) to optimize the use of other essential ingredients. Avoid liquefying ingredients with H2O, that can become a vapor in the 425f oven to discourage over pressurization of the patty potentially breaching the crust. Love your show! Just subscribed 😊! I think Jamaican patties are high up on the best foods in the world list, I started making my own, and on the spicy side, even the kids love making them, they may have to do the quick breathing to cool the mouth a bit, but the flavours they love it. Something I do when making pies and galettes is to freeze a stick of butter and grate it with a cheese grater before adding it to the dry ingredients. This keeps the butter nice and cold and spares me the tedious work of breaking up the butter into little chunks. I think that would work here - and I'm going to try this since this recipe looks fantastic.
