      I've owned my restaurant and worked years as a waiter, and that's just pathetic to me. You don't lie to people about your product. A good chef will craft wonders with the most basic cheap ingredients, you really don't need to lie to anyone.
      I absolutely despise people like that.

    I always tossed the bloodline when i lived on the mainland, but here in Hawaii, it’s a lot of people’s favorite part. It’s interesting seeing how different cultures value different flavors.

    Sushi server here. I’ve worked at a sushi restaurant for 7 years. Many are asking about the “fishy taste” and why you don’t want it, and it doesn’t just have an extremely strong fishy taste, but is also has a slightly strong iron flavor that isn’t similar to the rest. Some people enjoy it and utilize it at home, but normally at sushi places, you are taught (as a chef) that certain cuts of fish are proper for sushi, sashimi, and maki (sushi rolls). It’s just the traditional preparations that require it to be removed.

      Just be a bit careful. Tuna isn’t too dangerous but other fish like salmon run the risks of parasites that can be extra deadly to your dogs.

      Tuna like this never goes to waste. Never. Is the fish that kitchens use completely. Even the bones. It was so weird to me to hear that people discard the red part when it's the one that sells the most too.

      Nah, they say fishing is more sustainable than land meats. It really really isn't, unless they catch all their own fish (which most do not) XD
      It's not about the meat, it's how they view living things. Fish are lesser than cows to some people. Also, health benefits, personal preference (some people just don't like other meats), religion, etc. There are legitimate reasons people eat fish and not other meats

      @@HYPERxSONICxFANx2012 bluefin are overfished, so theres more restrictions on them. The problem is that they dont breed enough to replenish themselves. Bluefin take a while to sexually mature, longer to breed, and waaayy waaaaaayyyy longer to grow up to the right size to be fished.
      This is actually the same problem with red snapper (in the pacific) and orange roughy. Overfishing + decades to maturity. Theres actually a lot of sustainability and environmental problems with commercial fishing, but thats a whole other thing lol

Fish already has an overpowering flavor as it is, so I can understand why someone wouldnt like that part.       @@zsation240something i would like to point out is what a “fishy taste” refers to, personally when someone states a certain food is fishy it would already be known as a stinky undesirable smell. Cod, salmon, tuna and plenty of other fishes taste completely different from each other. I do not know a single person who describe the taste any shashimi or cooked fish as fishy. So in many cases or even most cases when someone states “fishy taste” it already means an overbearing smelly undesribale taste. So I find it a little weird how so many people in the comment section dont actually get this and take every word literally instead of figuratively.

    I've never eaten tuna like that, some people have told me it tastes kind of like a steak. I'm not a big fish guy so I've never tried it at a restaurant because I do not want to spend the money and go home hungry. I also live quite a ways from any ocean lol. I really enjoy other seafood like shrimp, lobster, crabs, oysters, scallops...... I've always wanted to try tuna like this but can never pull the trigger.

      Being far away from the sea isn’t really a problem with modern technology. With flash freezing, fish can be caught, broken down and frozen all within a few hours. When you defrost and eat it, it’s like you’re eating it’s a few hours fresh

      @@djtripp7077 well let me rephrase, I live in a town of 10,000 people we have a wal mart and 2 other little grocery stores. One of these grocery stores will order seafood like shrimp, crawfish, scallops, crab legs but not really seafood like fresh tuna. If you get a pound of fresh shrimp in our town it will cost you like $75! The closest big city is 3.5 hrs away, I live in the boonies my friend!!

      @@RUGERJONES, most of the shrimp, tuna or seafood in general anywhere on this planet comes frozen (IQF) if you're not on the coast. And if your grocery store gets any frozen supplies from that big city of yours at all (ice cream or frozen pizzas) they should be able to add to the frozen order a case of frozen tuna too. It's a good seller and can last in the store freezer for a couple of years without losing in quality. And frozen is less expensive than fresh perishable stuff anyway.

    That discarded piece cooks up well for pasta. Some olive oil, pepper, an acid like lemon and lots of garlic and parsley. Delicious for anyone who likes tuna since it mellows it out

    I watched a group of 4 people that did a blind taste test of sushi and sashimi, using the 4 most preferred fish. They all preferred the Yellowfin by far.

    Restaurants need to have an after-market option to refreeze and resell clean scrap like the blood line and vegetable trimmings. That blood line would tempura up well. Veggie scraps would make good chips.

    The bloodline is phenomenal! Put that on the menu. You’d be surprised how many people will order it. And fish skin is amazing too. Grill it for a little then use it as a wrap it’ll be delicate but that’s money comin in with a little extra work
