Made the channa part and had it with store-bought parathas ... had to rename it 'singles' since only one paratha was sufficient :) Served with cucumber and mango chutneys - huge hit with the family! Thank you for posting :)

When the indians arrived in trindad from India as laborers, they brought their food with them, but they couldn't get the same ingredients they could get india, so they had to make do what they had the carribean. Carribean food is a wonderful mixture of African, indian,European, and Chinese foods.

I remember as a child my mom and her sisters would wait around for this pleasant East Indian Mr that we called lovingly “Bara boy” his Bara’s were to die for oh my goodness it is TRINIDADIANS 🇹🇹 comfort food,yummy,yummy,yummy.
In those day the bara was made with urdi seeds grinded in a mill to make flour there is still urdi sold in groceries regular flour was added to the urdi flour to hold it together

Dolores Boston Cucumber chutney: just grate cucumber(not the seeds part), add salt and squeeze out excess liquid. Roasted pepper sauce: roast hot red or yellow habanero or scotch bonnet peppers over flame and grind in a food processor or blend in a blender with salt and garlic (optional). In the blender you can use a little vinegar or water to get it moving. (Roasting is optional as well) Bandhania Chutney: Blend bunch of bandhania with a little water-salt, garlic and pepper are optional. Wake Up Thanks so much for your comments. Just grated cucumber with a little salt-especially if you are making the bandhania and pepper condiments. It all comes together nicely in the doubles. If you are not making the other condiments just add grated bandhania and hot pepper to it! Easy!
I tried making the bara twice and it just didn't come out right. Lol. But I see why now. I didn't make them out wide enough. So they came out like mini taco shells. Lol. Plus, I didn't have yeast. So I used baking powder. But now I do. So I'll try again soon. I'm highly confident now. Yes. Confadance is everything. 😃😃😃👌

You can also use cake flour ... it works great with this recipe. Get a flour with a lower protein content.👍
