- Here is how I make salsa. I make a sweet salsa you can add as may hot peppers and kind of hot peppers as you like to this. And if its too sweet cut back on the sugar and just make it your own,
Here is the recipe I used
9 and 1/2 cups tomato puree
I like the Roma tomatoes best they are meatier and make a thicker sauce.
2 cups chopped onion I used 2 large onions
2 cups chopped green pepper I used 2 green bell peppers
1 cup red and yellow bell pepper
10 cloves garlic minced
3 medium jalapenos finely chopped
1/2 tablespoon salt
1 and 1/4 cups fresh lime juice
1 cup sugar
1 tablespoon celery seed
1/4 bunch of fresh cilantro finely chopped
Bring to a boil and boil until it has thickened and then put into hot jars and water bath can according to canner directions.

You could use the blender for most of it just leave it a little chunky

Those are beautiful Roma tomatoes
Those Romas are about 50 dollars a box at Walmart here in Florida
Leftovers would be good in spaghetti sauce or you could just eat it with cooked macaroni or chips
I’m making salsa today. We like it fresh and not cooked. We add just a little bit of cilantro. I’ve made the mistake of adding too much and boy that tasted bad. Yours looks delicious. I like a little sugar in mine. I’ve never made that much at one time.

Here's another tip:
Put the veggies in the food processor which makes them alot smaller.
When we make salsa we use packaged salsa mix, i do believe ball makes a pretty good mix. It comes in mild and hot.
Remember do not touch your face and eyes after handling hot pepper's 🌶️

Unless you can get heirlooms or fresh grown tomatoes, usually Romas have a better flavor and definitely meatier. ❤😊😊😊

What temperature in the oven?
Jars and salsa at 250 degree farenhite. Bake salsa for 1 hour then turn off and leave in the oven until they are cool
I don't believe I have ever had a sweet salsa, but I would love to try it. Yours looks so good. Smooth is the way I like it, too. No cilantro for me, I am one of those people that it tastes like soap.
It is really good. I’m not a huge fan of cilantro but it does add a little more Mexican flavor. 🌿
Any idea of a recipe to make a smaller batch?
This is a double batch. Just cut it in half or one fourth and you have a small batch
