  • Pan searing a good pork chop is such a good skill to have in the kitchen. Pan searing your pork chop in a cast iron skillet gives the meat a delicious flavor that is guaranteed to please. Giving the meat a dry brine is one of the secrets to a perfect piece of pork with a great flavor, tenderness and juiciness. To go with the already delicious pork chop, I have a peperonata recipe that knocks this out of the park.

    Ingredients:
    16 Mini Sweet Peppers
    1 Shallot
    5 Cloves Garlic
    2 Heirloom Tomatoes
    1-2 Sprigs Fresh Thyme
    1/4 C Oil
    1/4 C Apple Cider Vinegar
    2 Tsp Sugar, As Needed

    Here in Greece we use pork neck for our pork steaks. I don't know why it isn't more popular, its much, much more delicious and fatty than the usual pork chops. You should definitely try some!

    I’m sure the pork with taste awesome with a nice hot sauce of habanero, maple syrup, vinegar, a bit of brown sugar, cardamom black peppercorn paprika
