Homemade Elderberry Syrup

  • Hello, my friends and welcome back to another video! Today we are making elderberry syrup. Elderberry is commonly used in folk medicine as an immune-boosting remedy, but it is also great in lattes and on pancakes!

    Disclaimer #2: My elderberry syrup is made with local honey, so technically it is not vegan. This is the only application I will consume honey and only from a local farm in my area.
    What you will need:
    6 cups filtered water
    1 ½ cups dried elderberries
    2-3 sticks of cinnamon
    6-10 whole cloves
    About 2 Tbs fresh ginger or two thumbs worth roughly chopped into chunks
    2 cups raw honey, or date syrup for a plant-based sweetener option
    Large saucepan, cheesecloth or a nut milk bag, and a fine mesh strainer
    Add everything to your pot EXCEPT the honey/date syrup and boil gently. Reduce the heat to very low and simmer for 45 minutes to an hour until the liquid has reduced by about half. Let cool enough to be handled. Drain the syrup, I find it helpful to carefully pick out the ginger and cinnamon sticks at this point. Smash or squeeze the berries to get as much juice out as possible using a nut milk bag or cheesecloth and strainer. Be careful because the purple juice and berries can stain clothes and surfaces. Add the sweetener to the semi-cooled syrup and stir to combine. Add to jars, seal, and store in the refrigerator for up to 3 months. Enjoy!
