Kor moo yang (คอหมูย่าง) is NOT pork shoulder. It is pork neck, also called pork jowl, and is a completely different, very fatty meat. Any pork cut can be prepared this way, but pork neck will always be more authentic, and taste better...now you know.

Made this, it was excellent. Pork was tender, nice char. No oil used in non-stick pan so there was no spatter and easy clean up.
